Irish Apple Raisin Scones and Shrimp Scampi



 

My St. Patrick's Day table is set and I've made us some delicious scones. 

We can have some Irish Breakfast tea, and some Kerrygold butter on our scones.

These scones are so tender and moist, and the sprinkling of green sugar makes them so pretty on my beautiful platter

My vintage Johnson Bros Rolland teacup is a favorite of mine.


My friend, Heidi, and her mother-in-law came for a visit and brought me these sunshine-y flowers.  Aren't they pretty in my teapot with shamrocks?

Irish Apple Raisin Scones

Irish Apple Raisin Scones

These scones are so moist with the grated apple and a delight to eat. I changed the procedure to simplify cleaning.

Ingredients

  • 3 Cups Self-Rising Flour
  • 1/2 Cup Sugar
  • 3/4 Cup (1 1/2 sticks) Unsalted Butter, cold and cut into small pieces plus more at room temperature for serving
  • 1 Cup Buttermilk
  • 1 Large Egg, beaten
  • 1 Small Green Apple, peeled, cored, and grated (I used a Honeycrisp apple)
  • 1/3 Cup Raisins
  • Cream or milk for brushing the tops
  • Sugar Crystals for Sprinkling

Instructions

  1. Preheat the oven to 350F.
  2. Line a baking sheet with parchment paper.
  3. Combine the flour and sugar in a large bowl. Add the butter and using a pastry blender, cut the butter until the mixture resembles coarse crumbs. Stir in the buttermilk and egg with a wooden spoon until a soft dough begins to form.
  4. Transfer the dough to a lightly floured work surface and, with floured hands, knead in the apples and raisins. Divide the dough in half and form each half into a ball. Flatten each into a 1-inch thick disk. Place on the prepared baking sheet and, with a serrated knife that has been dipped into flour, score the dough into 6 wedges. I separated the scones slightly. Brush onto the tops a little cream or milk, and then sprinkle the tops with sugar crystals. Alternatively, you can bake these in large (8) or mini (16) cast-iron scone pans.
  5. Bake the scones for 25 to 30 minutes, or until the tops are golden and a skewer inserted into one of the wedges comes out clean. Remove from the oven and let cool for 10 minutes. Serve warm with butter or clotted cream, if desired..

Notes

I watched a video on scones and the lady said that if want a more tender scone, to cover the tops with a tea towel after they are baked. For a crunchier top, do not cover.

    Your scones look perfect.

    When I make shrimp scampi I love to add small chopped broccoli or spinach to give it some more green - always good for St Pat's, right? (And nutrition, of course.) I love shrimp scampi.

Glad to be home again but have had so much to catch up, including my favorite blog buddies ;) Your scones look so delicious and shrimp scampi is one of my favorites!
