Salted Nut Roll Bars

Happy Days are spent outside on my patio in the Fall! 

I've made us some bars from an old Cuisine magazine that I kept.  I'm such a hoarder of recipes, since when I was a teenager. 

This pretty teacup is from my friend Rosie's mother's collection and is from the House of Goebel, Bavaria, W. Germany.

This is tea is from my latest batch that came from my Mother's Day gift from Kevin and Kristen.

I think it's a perfect Fall tea, even though the name is Summer Nights, and it was very enjoyable.

Salted Nut Roll Bars

Salted Nut Roll Bars

These are crunchy, chewy, salty and sweet!


  • 1 lb. peanut butter sandwich cookies, coarsely crumbled
  • 1 stick unsalted butter, melted
  • For the Topping-
  • 2 cups peanut butter chips
  • 2/3 cup light corn syrup
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla
  • 2 cups miniature marshmallows
  • 2 cups dry roasted peanuts
  • 2 cups Rice Krispies


  1. Preheat oven to 350 degrees; spray a 13x9" baking pan.
  2. Pulverize cookies in a food processor until fine crumbs from. Add melted butter; process until crumbs form clumps. Press crumbs into prepared pan. Bake for 15 minutes or until golden.
  3. Melt peanut butter chips, corn syrup and vanilla in a saucepan oven medium-low heat, stirring until smooth. I actually did this in the microwave for about 1 minute, stirred and then did a few seconds more until melted and smooth. Make sure to do this in a large enough bowl because you will be adding to this. Spread 1/2 cup of this mixture over the crumb base.
  4. Top with marshmallows and return bars to the oven. Bake until marshmallows puff, about 2 minutes. Don't let marshmallows brown or they'll turn crunchy.
  5. Toss peanuts and Rice Krispies into the remaining peanut mixture. Drop spoonfuls of the topping over the marshmallows, then spread with a spatula that has been sprayed with non-stick spray. Cool bars before cutting.
  6. Enjoy

I finally was able to celebrate with Molly for her birthday.  She and Caiden and Cissy were on Fall break for a few days.  Here she is amazed at her brunch meal.  

Caiden ordered chicken and waffles and a latte.  They embellish  the food and drinks here so beautifuly.

Cissy ordered a cold latte, and isn't it beautiful??!

Cissy ordered the Brioche French Toast!  It was definitely shareable and was oh so good!

Hayden had her 5th Birthday party and I was happy to be included.  There was face painting, decorating of microphones and heart shaped glasses, and little girl fun!
