Gingerbread Cookies

 Let's enjoy some gingerbread cookies by the cozy fire today.  


 This Johnson Brothers plate with the matching teacup is one of my very favorites!


 Don't you love the Christmas tree inside the cup?


 My daughter gave me this Baking Santa years ago.  Isn't he sweet with his overalls, flannel shirt, flour sack, wooden spoon,  pitcher, and cookies?  


 This sweet girl came to help cut out gingerbread cookies for my grandchildren to decorate for our party.

Gingerbread Cookies

My late beloved and I went to Williamsburg for our honeymoon way back in 1970. While there, we tasted the most delicious gingerbread cookies. I found this recipe and saved it from somewhere that I don't remember now.

ingredients:

1 cup granulated sugar
2 teaspoons ground ginger
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 teaspoons baking soda
1 cup butter, melted
1/2 cup evaporated milk
1 cup unsulfered molasses
3/4 teaspoon vanilla extract
4 cups all-purpose flour, unsifted


instructions:

Preheat oven to 375°F. Combine the sugar, ginger, nutmeg, cinnamon, salt and baking soda in a large mixing bowl. Mix well.

Add melted butter, evaporated milk, molasses and vanilla extract.   Stir until well combined.
Add the flour 1 cup at a time, stirring well after each addition to prevent lumps. The dough should be very smooth and stiff enough to handle without sticking to your fingers. If necessary, add up to 1/2 cup additional flour to prevent sticking . 

On a well-floured surface, roll out the dough to 1/4-inch thickness. Cut with  cookie cutters.   It may be necessary to re-flour your surface several times to prevent dough from becoming sticky.

Bake on a lightly greased baking sheet, or parchment lined baking sheets,  for 10-12 minutes.  For small cookies, reduce baking time to 6-7 minutes. The cookies are done if they spring back when touched (but before the edges begin to brown!). Remove cookies immediately from baking sheet and cool on cooling rack. 

If desired, frost your cookies, or outline them with a royal frosting or a butter cream.

  2. Love your JB plate and teacup, Kitty! So pretty for this time of year. I have a baking snowlady but I haven't got her out this year. I also made ginger cookies but they're not as fancy as yours. Mine are just plain rounds but they are nice with a cup of tea or coffee. I may not be back again before Christmas because my family is arriving tomorrow so I will wish you and your dear ones a Merry Christmas! God bless you with comfort and joy, Kitty!   4. Gingerbread cookies are such a treat. Yours look wonderful and I'd love to share a cup of tea with you. I made ginger cookies on Saturday, but they are not yet decorated.   7. Cissy is definitely her grandmother’s granddaughter...such a cheerful companion in the kitchen and a big help, too. I love gingerbread cookies. Alas, I am the only one in my family who does. It is one of my great sorrows that no one likes anything with molasses in it? What is the matter with them?!

    I do love that Christmas set from Johnson Bros. I need to keep my eyes peeled for some...wonder if they ever show up at The Christmas Tree Shop as Friendly Village did a few years ago.

    I can see why you love that Johnson Brothers tea cup and plate, it's gorgeous!
    I love ginger bread cookies, but never make them. Rolled cookies are not my favorite, maybe that's why? :-)
    Your recipe sounds good, just may venture out and make them.

  19. The cookies look so good and adorable. I whipped up a bath of gingerbread cookie dough and matter of fact it is chilling in my frig. My plan is to bake them tomorrow maybe....LOL!   27. Kitty, I love gingerbread cookies year round, but I'm too lazy to decorate them! :D Williamsburg is a wonderful place for a honeymoon! I've only been there once but would love to go back one day. We had the best time, along with Mr Delightful's sister, who is no longer with us.
