Tiny Pecan Muffins

 Please join me for a cup of Vanilla Chai Tea and a Tiny Pecan Muffin. The beautiful hydrangeas were gifted to me from my youngest daughter-in-law.  Aren't they pretty?  I have them in my teakettle that my son, Mike painted for me.  The plaid plate is from Pier 1.  The pretty framed picture is from Jenna from The Painted Apron , that she painted and made into note cards.  I just love it!


 My teacup is from Grace's teaware, and found at HomeGoods.

 Cissy chose that we make the Tiny Pecan Muffins this week, when I told her that they taste like pecan pie.  Pecan Pie is her favorite (mine, too!).




Yield: 3 dozen

Tiny Pecan Muffins


These little gems taste like pecan pie, and are perfect bite-sized morsels.

ingredients:

1/2 cup self-rising flour  (I used 1/2 cup all purpose flour + 1/4 t. salt +3/4 t. baking powder)
1 cup brown sugar
1/2 cup butter, melted
1 teaspoon vanilla
1 cup chopped pecans
2 eggs, beaten

instructions:

Mix all ingredients.
Bake in greased (I used Baker's Joy) miniature muffin tins @ 350 degrees for 15 minutes.  Do not bake longer than 15 minutes.

NOTES:

You can line the muffin tins with mini paper liners, but be sure to spray the liner.  My muffin tin is nonstick and the muffins came out just fine.

Love all the pretty black and white accents, the plaid plate, the pretty teacup and saucer, the pot in which the gorgeous white Hydrangea is resting and the sweet little framed picture......all are singing a jazzy song sitting on the check tablecloth! Happy birthday to the both of your grandsons and as always Cissy looks as if she is enjoying cooking up a storm in your kitchen. Love too, the pumpkin your son drew on the chalkboard....how clever.   4. YUM on those muffins! I just printed the recipe! Marty loves pecan pies so I bet he would love these. Would go well with his coffee in the mornings on his way to work. Look at those handsome grandsons! I have just one grandson as you know Kitty and we spell his name with er. Conner. If he was given our daughter's maiden name.   10. Kitty, I love the arrangement with this week's dessert! The checks (of course!) have me smiling, but the femininely delicate pattern on the tea cup/saucer is so nice. Can't believe your grandsons are 18 and 15! I hope they each had great birthdays - one now an adult, the other able to drive - yikes! Put some books on Cissy's head so she doesn't grow up! ;)

Yes, Jenna is so talented, I love her art! Such a pretty black and white theme, love the kettle. The mini pecan pies sound delicious and I must make this recipe, we love pecan pie here. I have a recipe for French pecan minis, really good too. I love to make them for Christmas. Wow, your grands are so grown up, especially Connor. My Connor is ten now. Tell Cissy she is always such a charming cutie!
