4 skinless, boneless chicken breasts halves, cut into 1" pieces
1 red pepper, chopped
1 onion, chopped
4 garlic cloves, minced
3 T. olive oil
2 T. chili powder
2 t. salt
1 t. ground cumin
1 t. ground coriander
2 (15 oz.) cans black beans, drained and rinsed
2 (15 oz.) cans white kidney (cannelini) beans, drained and rinsed
1 (28 oz.) can crushed tomatoes
1 can beer (or chicken broth)
Grated cheese to add at the end
Saute' chicken, red pepper, onion, and garlic in oil in a soup pot about 5 minutes or until chicken is just cooked. Add chili powder, salt, cumin and coriander; cook 3 minutes. Stir in beans, tomatoes and beer (or chicken broth). Bring to a boil. Simmer 45 minutes, uncovered, stirring frequently. Reduce heat to lowest setting. Stir in about 1 cup of shredded cheese at the end, or if preferred, garnish with the grated cheese.
Wouldn't you love a bowl of this Checkerboard Chili? I'll save some for you!

ReplyDeleteGreat minds on the same track!! We had white chicken chili last night...only it was Marie Callendars from a can. LOL Waaaay to spicy for us. Of course, I bought the BIG pack of 6 cans from Sam's Club. Duh? I'm taking it to a food pantry.

We love chili to the moon and back but I've never heard of CHICKEN chili...no sir, us Texans have to have BEEF....hahhaa...actually, your recipe sounds wonderful and must try it.

ReplyDeleteCannellini, huh? I don't think I've ever had chili with cannellini, but heck...why not! Sounds good! With the chicken, I'm sure that pairs up nicely and the flavor is great! I just took ground turkey and ground beef out of the freezer to make chili for the weekend, but I think I'll try this instead. Something different. Of course, I'll be loading ours up with habaneros!!!! We're just self-destructive that way! :-)

Mmm . . . perfect time of the year for chili. I love black beans in my chili, too. I've never tried beer in my chili, but we have a chili cook-off every fall in our town, and a few years ago the best-tasting one had Jack Daniels in it, so maybe there's something to that! I love the candle in your first picture, and that looks like a bowl of candy corn and peanuts, too. Yummy :)
