Spinach Salad with Watermelon and Feta

 Kathleen is having a "Summer Whimsy" party at Let's Dish! and Sandi is having a "Savour the Summer" Tea Party at Rose Chintz Cottage and I wanted to use one of my favorite teapots that I recently found in a storage box.   The sweet Joan Walsh Anglund doll that's sitting on a wicker chair, belonged to my daughter when she was a little girl.  My "summer" blocks were a gift from my sister and actually have a watermelon paint design and a tiny watermelon on top.  

 I had to add my favorite lady vase to the setting.  She always stays on my kitchen sink area all year long.  My Mikasa Berry Delight dishes blend with my teapot.

What could be more perfect for my summer theme than a watermelon and feta salad? 
My youngest daughter-in law made a version of this fabulous salad, but she used arugula. I had some spinach at home and decided to use that instead. It's a refreshing  salad for summer and has the coolness and sweetness from the watermelon and a slight bite from the feta. I love this combination and I think you will, too. I hope you try it at your next outing.  You could also add some blueberries and have a red, white and blue salad.  

For the Salad

Spinach or arugula
Watermelon, seeded and cubed
Red onion, sliced
Feta cheese, crumbled

Combine all the salad ingredients in whatever portion you like. Drizzle with the balsamic dressing and toss. Enjoy!


Balsamic dressing

1/2 cup oil (olive oil or canola)
1/4 c. Balsamic vinegar (I used white balsamic this time)
1 T. sugar (I used 2 packets of Splenda)
1/4 t. salt
freshly ground pepper

Combine oil and remaining ingredients in a jar.  Covers tightly & shake.  Pour over enough to coat your salad; save the rest for another time.

  3. Perfect! I love the watermelon idea for summer whimsy! I'm busy with jury duty today so I don't know if I'll get home in time to do my table. (Should have done it yesterday but was distracted with a family thing.)

    Anyway, I love your whimsy, and I really love the salad.

  12. Watermelon in a salad? Hmmmm...that sounds very interesting. I like feta, I LOVE spinach, and I've just in the past year started liking watermelon again. What have I got to lose? I'll try it! I like to have nice side salads to start dinner off, and in this hot, humid, icky weather, this sounds like a really good recipe to have on hand. I ALWAYS have feta and spinach in the fridge. We eat spinach like it's going out of style around here!!!

    The blocks are so doggone cute! I'd like to make some of those for summer around here. That's yet another craft project I'm sure I'll never get around to, but the thought is nice just the same!

  14. Kitty, may I run right over & BORROW every single thing that is on this table??? LOL I'm having 2 quilting friends come this afternoon, for a cuppa tea & a treat & to play on my long arm. This whole scene would be SEW perfect!!
    I have the watermelon already but I sure didn't intend to fancy it up like you did. I may need to make a grocery store run before they get here.
    LOVE the little watermelon teapot, along with the cute blocks & that darling vase...so cute!

  21. Hi Kitty, this is one of my favorite summer salads. I put strawberries or blueberries in mine when they are available. I cut out the watermelon in heart shapes for a bridal shower once.

    This salad is quite interesting with the watermelon. :) I love a salad with spinach so this should be wonderful. Your idea with the blueberries is a great one, and I believe i will make it for our July 4th Bar-B-Q at the church.
