A few weeks before my dear hubby passed away, he requested pancakes. Doesn't our love for someone always involve food? Our family has always loved German Pancakes and I made those for him. They're almost like a crepe, but somewhat thicker. I filled my sweethearts with sugar and cinnamon, and mine with some raspberry jam.
This was my treat of crepes, which were served on a cut glass snack plate that I bought at our Trade Days. The cup is perfect for holding fresh fruit or even a cup of soup. The rose teacup is part of a set gifted to me from some dear friends. My faux roses are in a pretty container from Hobby Lobby. All was served on my Southern Living wrought iron tray lined with a crocheted doily. You can find that recipe for German Pancakes here.
Raspberry Jam
3 3/4 cups mashed raspberries (wild berries are best)
1/4 cup lemon juice
6 1/2 cups sugar (Betty said to stick with the exact amount of sugar)
1 teaspoon butter
1 pouch of Certo (Betty never used powdered pectin)
Mash the berries then stir in the lemon juice and sugar. Bring to a boil over high heat and boil for 1 minute. Remove from heat and add the butter (this removes the foam) and the pouch of Certo. Stir for 1 minute more, remove from heat. Fill jars, process, and enjoy!

Yes, food and memories go on and on and we pass it on to the next generation don't we? I have never seen butter added to a jam. I am sure that makes it all the better - right Paula Deen? I agree, raspberry jam is the absolute best. Unless we are making a specific recipe that calls for something else this is all we have in the house. I am sure yours is absolutely amazing.

ReplyDeleteThe German pancakes are new to me but raspberry jam I know, and like on my scones. Hubby never eats jam so I buy a bottle of seedless raspberry jam for myself.

Such a sweet setting for some delicious yummies! Kitty, I think I have those same clear glass cups & trays. I never thought to use the cup for fruit...I've also never made crepes. ~~blush~~ I think I need to try that recipe soon.

The raspberry jam sounds delicious, and your tray looks so inviting. I think a lot of the special family memories many of us have involve preparing foods that our loved ones liked. Cooking is one of the ways you expressed your love for Rich.

German pancakes with raspberry jam sound yummy. The recipe ist new to me, I never had one with butter, but I can imagine a good taste. I will try this.

Hi Kitty, guess what Red Raspberries are my favorite. But I find it very difficult to give my jam away. Strawberry jam is not a problem for gift-giving.......I bad. But those beautiful Red Raspberries are so special..and hard to come by. I have an orchard that I pick at..Sure your hubby was a happy man when you cooked for him. I used to live in Alaska and the berries are plentiful but beware the bears also enjoy the berries. So you pick a few then you look around for Mr. Bear. Always keep the car door open so if I needed I could jump in and drive away..............The freezer in Alaska was full of berries. Miss that part of living in Alaska. Take care and have a great day. Kitty, I am so sorry for your loss. I don't know the heartache in losing a spouse but I do know grief. My oldest daughter passed away May 2012. My heart cries for you and with you and you will be in my prayers.
