Morning Glory Muffins


Morning Glory Muffins are on the patio today.  Have you ever had them?  They're so moist and flavorful and full of lots of good things, like carrots, apples, raisins, and nuts. My copycat Mackenzie Childs tea kettle that my son, Mike painted for me, is decorative only, and it's on top of a crocheted sunflower that a friend made.   I'm using my cheery sunflower plates, and my grandmother's goblets are on my pretty coaster, found here.  I wanted to use fresh sunflowers, but these yellow roses for $6 a dozen captured my eye! 


As we ease into Fall, I like to use this Calico teacup,by Crownford China, England,  along with my sunflower accessories.

Morning Glory Muffins

Morning Glory Muffins

This recipe comes from a church cookbook that my friend, Joy, gave to me. The original recipe made 36, but I've cut the recipe in half.

Ingredients:

  • 2 cups flour
  • 1 and 1/4 cup sugar
  • 2 teaspoons soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup oil
  • 2 teaspoons vanilla
  • 2 cups grated carrots
  • 1/2 cup raisins
  • 1/2 cup chopped pecans
  • 1/2 cup coconut
  • 1 apple, peeled, cored, and grated

Instructions:

  1. Into a large bowl, whisk the flour, sugar, soda, cinnamon, and salt.  Stir in carrots, raisins, pecans, coconut, and apples.
  2. In a bowl, beat the eggs, and then add the oil and vanilla. Stir in the flour mixture into just combined.
  3. Spoon batter into well oiled muffin tins (I used a baking spray that contains flour). Bake at 350 degrees for about 20 minutes, or until the tops of the muffin springs back when touched.  Let cool in pan for 5 minutes, and then turn out on rack to cool completely.

Notes:

I used my food processor to grate the carrots and the apple.

Sticky Turkey and Cheese Sandwiches



Welcome to tea in my garden with some yummy hot sticky sandwiches.


I'm using this Arthur Wood teapot.  I thought it looked so pretty with my favorite tablecloth that my friend, Joy, gave me.


Here's some of the pretty detail of the luncheon cloth.


This is a Rosina teacup that I received in a teacup exchange.


This Royal Windsor teacup was given to me by my neighbors, when I lived in Ohio, as a gift for keeping an eye on their home and getting their mail.  It's probably about 40 + years old now.

Sticky Turkey and Cheese Sandwiches

Sticky Turkey and Cheese Sandwiches

This recipe is adapted from Siri Daly. She used ham and swiss but I changed it up. It's really good either way, and I'm sure roast beef would be good, too. It's great because you can prepare the day before, which is always a help.

Ingredients:

  • 1/2 cup (1 stick)  butter
  • 1 tablespoon dry mustard
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon poppy seeds
  • 1 package small sweet Hawaiian buns
  • enough sliced turkey for 12 small buns
  • enough cheese of your choice for 12 small buns (I used Smoked Gouda)

Instructions:

  1. In a medium saucepan, bring butter, dry mustard, Worcestershire, brown sugar and poppy seeds to a boil in a saucepan. Lower heat and let simmer for a few minutes. Set aside.
  2. Slice buns in half and assemble sandwiches by adding desired amounts of turkey and cheese. Place in a small baking dish (it helps if they fit snugly in there) and pour sauce all over, using a spatula to make sure they are all coated. Cover with foil and let marinate in fridge for at least one hour, or overnight.
  3. When ready to bake, preheat oven to 325 degrees.
  4.  Bake sandwiches for 10 minutes covered and another 10 minutes uncovered. 

Notes:

When I make these the night before, I bring the sandwiches out on the counter for about 30 minutes to take the chill off.

Everyone, but my Marine grandson, a daughter-in-law, and a granddaughter was here at my house on the 7th anniversary of Rich's passing.  It meant the world to me, and we had such a wonderful family time.

Oatmeal Cherry Cookies



Seven years ago, on August 16th, my beloved hubby passed away.  We always used this Williamsburg reproduction teapot, that my late Great Aunt Kitty gave us, which had been hers.    Oatmeal raisin cookies are my all-time favorites, but this is a new twist with dried cherries.  I'm thinking of memories of him today.
 
My pretty cherry teacup is my choice for today.
 
We had gone to Williamsburg, VA for our honeymoon, and maybe that's why Aunt Kitty gave us this teapot of hers.

Oatmeal Cherry Cookies

Oatmeal Cherry Cookies

Ingredients:

  • 2 sticks butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 t. vanilla
  • 1/2 t. almond extract
  • 2 cups flour
  • 1 t. salt
  • 1 t. baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 3 cups oatmeal
  • 2 cups dried cherries

Instructions:

  1. Place the butter, brown sugar & sugar in the bowl of electric mixer, fitted with paddle attachment. Beat on medium speed for about 30 seconds., until the mixture is fluffy. Turn down the speed to low & add the eggs & the extracts. Beat for about 30 seconds longer.
  2. In a mixing bowl, sift together the flour, baking soda ,salt, cinnamon and cardamom. Add to the mixer, while beating on low speed & beat for about 15 seconds, stopping the mixer once to scrape down the sides. Add the oatmeal & cherries & beat for about 15 seconds longe
  3. Using an ice cream scoop, scoop the dough & put onto parchment-lined baking sheets. Refrigerate the cookie balls on the sheets for about an hour. Gently press out the dough with the back of your hand. Bake at 350 degrees for 12-15 minutes. Makes about 30 cookies.
  4. NOTE: Often I will put the shaped cookie balls on the baking sheets & put into the freezer. When the cookie balls are frozen, I transfer them to freezer-proof plastic bags. When I'm ready for a warm cookie, I put the cookie on parchment and bake for a few extra minutes.
