Shortbread Bars with Pumpkin Butter

It's a Halloween Tea Party with some treats and Pumpkin Spice tea from Aldi.

I used this quilt I pieced together several years ago for my tea table.

My tea cozy is made from the same vintage -look fabric that's in my quilt.  The teacup is from Grace's Teaware.

This fun little character with the gourd head just makes me smile.

My hand appliquéd and embroidered pillow was one I did while we lived in Michigan over 40 years ago.

I get smitten with seasonal ingredients, and Trader Joe's Pumpkin Butter was sitting in my pantry waiting to be used.  These little bars on my Pier 1 plate are a nice treat.  I hope you try them.  They'd also be good for Thanksgiving.

Yield: depends on the cut, but I cut 16

Shortbread Bars with Pumpkin Butter Filling

This easy recipe is very versatile, as apple butter or even jam or preserves could be used in place of the pumpkin butter.

Ingredients

  • Crust & Crumb Topping:
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup chilled, cubed unsalted/salted butter
  • 1 large egg
  • Filling:
  • 10 oz prepared pumpkin butter (I used Trader Joe's pumpkin butter)

Instructions

  1. Heat your oven to 375 degrees, and lightly grease an 8x8-inch or a 9x9-inch baking dish.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the chilled cubed butter using a pastry cutter or two forks until the mixture resembles pea-sized, flour-coated crumbs. Add the egg and stir but using your hands helps to form the crumbs.
  3. Divide the dough in half. Press one half firmly into the bottom of the prepared pan.
  4. Spread the pumpkin butter evenly over the bottom crust.
  5. Crumble the remaining dough evenly over the pumpkin butter layer. Bake for about 30 minutes until the top is a light golden brown.
  6. Cool completely before cutting into 16 bars.

Thank you for your visit!  xo

  1. Those sound delicious! I don't think I've ever heard of pumpkin butter (though they would be great with apple butter too I'm sure).
