It was a somewhat cooler day and I headed outside.
My strawberry pitcher, from Sur La Table is a favorite of mine, and it's holding some pretty alstroemeria.
I'm using my beautiful blue and white teapot for my blueberry coffee cake, and my tea is Very Berry organic white, which is a blend of blueberry and raspberry.
This set of dishes holds memories of when my late beloved and I went to a Bed and Breakfast in Wimberley, TX, and they served our food on these pretty Mikasa plates, called Berry Delight. I was absolutely smitten and was able to buy them at Mikasa, when they were in business.
I have this very old cookbook , copyright 1959, that my mom's friend let me have probably when I was in high school. We were at a book sale and she wanted it, but let me have it. I was a cookbook collector from way back. In the book is a recipe for this coffee cake, which was a Junior Second Prize winner in one of the Pillsbury Bake-Off contests.
Yield: makes a 13 x 9-inch cake

Blueberry Boy Bait
I adapted this recipe for ease in preparation and also added some cinnamon and almond flavoring.
Ingredients
- 2 egg whites
- 2 cups flour
- 1-1/2 cups sugar
- 2/3 cup butter
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon (my addition)
- 1/2 teaspoon almond flavoring (my addition)
- 2 egg yolks
- 1 cup milk
- 1 cup blueberries
Instructions
- Into a medium size bowl, beat the egg whites until stiff; set aside.
- Sift flour and sugar into a large mixing. Cut in butter with a pastry blender until the size of small peas. Reserve 3/4 cup of this mixture for the topping.
- To the remaining crumb mixture, add the baking powder, salt, cinnamon, almond flavoring, egg yolks, and milk, and beat with mixer on low speed for 3 minutes.
- Fold the stiffly beaten egg whites into the batter and then spread into a sprayed 13 x 9-inch baking pan.
- Arrange the 1 cup of blueberries over the batter. Sprinkle with the reserved crumb mixture.
- Bake at 350 degrees for 40-50 minutes.
- Serve warm with whipped cream or serve plain as coffee cake.
Notes
This was a Junior Second Prize Winner in a Pillsbury Bake-Off.
You may like to add vanilla in place of the almond flavoring, or maybe some lemon zest.
Extra blueberries would be great, too!
My granddaughter Ella, will be 16 soon, and this is her car!
Molly, Cissy and I went to a great- niece's wedding in Tennessee and it was so beautiful. The wedding was under a covered pavilion, with a pond that had a fountain spray, and up the hill was a gorgeous white barn for the reception. It was my niece's daughter that got married. The three girls on the bottom left are all cousins, and daughters of the brothers in the family. We had the best time dancing the night away until the very last song was played.

I have a recipe for blueberry boy bait that we use and love too; though mine is quite different from yours. I got mine from an old Cook's Country cookbook. The wedding looks beautiful!
