Porcupine Meatballs, Raspberry Whipped Sensation Pie and a Rainbow



Teatime is with raspberry colored peonies! 

My favorite luncheon tablecloth is so pretty with the peonies which I happened upon at Trader Joe's.


Raspberries are my favorite berry and they're always in my fridge.  This easy pie is such a refreshing dessert for Spring and Summer.



Johnson Bros. Rose Chintz is another favorite, and the tea is good either hot or iced.



This is another work of art Fitz and Floyd teapot and the most detailed one that I have.




The back of the teapot is just as pretty, and of course the raspberries and the pretty bluebird are so sweet.  Even though bluebirds are not to be seen in my yard.....

Raspberry Whipped Sensation Pie

Raspberry Whipped Sensation Pie

I have made this pie with strawberries and also with blackberries, but this version is probably my favorite. It's so easy!

Ingredients

  • 2 cups fresh raspberries
  • 1 can sweetened condensed milk
  • 1/4 cup lemon juice
  • 1-8 ounce tub of frozen whipped topping, thawed and divided
  • 1 graham cracker or Oreo cookie crust

Instructions

  1. Mash the berries in a large bowl.
  2. Add the sweetened condensed milk, lemon juice and 2 cups of the thawed whipped topping.
  3. Pour into the pie crust. Frost with the additional whipped topping. Cover and freeze for 6 hours.

Notes

It's easier to slice if you let it sit out on the counter for a bit.




This is such a fun recipe that I clipped from my local newspaper in Columbus, Ohio over 50 years ago, before any of my kids were born.  I still have the yellowed clipping and it's a delicious comfort food.

Little Porcupines

Little Porcupines

This is such a fun, comforting meal to fix. It's great for big and little kids!

Ingredients

  • For the "porcupines"
  • 1 lb. ground beef
  • 1/2 cup uncooked rice
  • 1 tablespoon finely chopped onion
  • 2 tablespoons finely chopped green pepper
  • 1/2 teaspoon celery salt
  • 1 clove garlic, minced
  • Sauce:
  • 1- 8 ounce can tomato sauce
  • 1 cup water
  • 4 whole cloves
  • 1/2 teaspoon cinnamon
  • 2 tablespoons sugar
  • 1 tablespoon Worcestershire Sauce

Instructions

  1. For the "porcupines":
  2. Rinse rice, drain.
  3. Combine rice, meat. onion, green pepper, celery salt and garlic. Form into 1-1/2" balls.
  4. Sauce: Mix all the ingredients together in a casserole that has a lid.
  5. Roll each "porcupine" in the sauce until well coated.
  6. Bake covered in a 350 degree oven for 50 minutes. If preferred, cook on top of the range using a heavy skillet and a lid.
  7. Make sure to fish out the 4 whole cloves before serving!

Notes

The original recipe called for 2 cups of tomato juice, but that's not something that I always have. The tomato sauce + water is a great substitute.


The sauce thickens more if you let it sit a bit before serving.



Grandson Caiden turned 21 this past week, and granddaughter Avery turned 19 yesterday.  Avery finished her freshman year at college with a 4.0  is at a Christian Camp training to be a counselor for the summer.  Caiden has two more years of college.


My daughter, Molly, had Caiden's 21st birthday party at my house. Riley was here for a very short visit from the army, so she had all four of her kids at home.  Top photo is Cissy, Elizabeth (Caiden's fiancee'), Molly, Caiden, Riley, Connor, and Kendyll (Connor's fiancee').  Caiden wanted our family's favorite dessert, which is an ice cream dessert with peanut butter crust.  It was a fun night, and the kids stayed and played UNO just like old times.  




When we walked outside after dinner, we were greeted by this fabulous double rainbow, and it hadn't even rained!!

  3. Wow! What a loaded post! 😀 I use to make the porcupine meatballs when my kids were growing up. We have a church potluck this Sunday and I will be making the pie! I LOVE raspberries too!   5. What a pretty cloth you have laid in the first photo, Kitty. And that teapot is gorgeous! The raspberry pie recipe sounds delicious, and so easy. I wonder if it would work with real whipped cream in place of the cool whip, which always tastes chemically to me. I remember porcupine meatballs, but haven't made them in a long while. Time to remedy that, perhaps! Have a good week!

  6. Wow! Kitty...a double rainbow...perfect end to a wonderful family event. You have such a loving and beautiful family and they are so caring for you. You are truly blessed. It is a good feeling knowing they want to come celebrate at your house. I love the blue jay taking a bath, and I love porcupine balls.... and I have a recipe from my grandmother that I use and it is similar to your recipe. Grandma's recipe is at least 80 years old, but she used a pressure cooker and I can still hear that steam rocker on top of the ole Presto pressure cooker with its wood handle... hissing and rocking for the full 20 minutes. She let the steam 'drop' on it's own and then I was in for a treat because she made it every time I was allowed to spend the night at her house. Thanks for the memories my friend.   9. Hello Kitty, your tea table is lovely with the gorgeous cloth and the peonies. Fitz & Floyd made some of the most beautiful teapots, and yours is a great example! The raspberry whipped sensation looks delicious and a perfect warm weather dessert. I remember porcupine meatballs, thanks for that old-time recipe that is still good after all these years. Happy birthday to Caiden and Avery, handsome grandson and beautiful granddaughter. How fun that Caiden’s birthday party was held at your house with everyone being together! The double rainbow was the icing on the cake for a fabulous evening with family and making more memories!

    I love the birthday celebrations. We like to play UNO too. :-) It is one of Atticus' favorites. Atticus turns 24 today, May birthdays are extra special.
    My favorite berry is a blackberry, with raspberry coming in a close second.

  14. That pie is perfect for summertime= just in time for Memorial Day and our Independence Day celebrations for sure! Question though: you mentioned "frosting" the pie with remaining thawed whipped cream topping......but it looks like you piped yours on top and not frosted it - just making sure I understand correctly. Your meatballs sound delish too and oh the double rainbow!! Funny but Karianne from Thistlewood Farms blogged - living in TX too - mentioned a double rainbow. I wonder if it is the same one?   18. Your teapot is lovely Kitty and I'm sure always a pleasure to use it. The meatballs sound delicious and they must be if you are still using the recipe after all those years. I enjoyed seeing your family photos, wonderful your daughter had all four of her children home. And Connor, oh wow, he's engaged. That's wonderful! I've enjoyed following your Connor, and our Connor is graduating HS this weekend. Didn't they grow up so fast........Happy Memorial Day weekend Kitty.
