Almond Joy Cookies




For the month of May, I have an easy treat to share if you like coconut! 

My friend Becki brought these delicious morsels to my annual tea party, and they are so easy, and no mixer is involved.


My paternal grandmother gifted me this Bavaria plate.  





My dear friend, Mary gifted me this gorgeous Adelaide Blue by 222 Fifth teapot and I just love it!  It's like a beautiful work of art and I'm captivated by the design. Thank you so much, Mary!   We are going to have some Almond Sugar Cookie black tea, also from Mary.

My beautiful Shania Twain rose is gracing my table, along with the Goebel Blessed Mother that my beloved Dad bought me when I was a new mother.  My Dad loved picking out his own gifts, and truly they are such treasures to me.

Almond Joy Cookies

Almond Joy Cookies

If you need an easy treat, these cookies take only 4 ingredients, and no mixer is required.

Ingredients

  • 1-14 ounce sweetened coconut flakes
  • 2 cups semi-sweet chocolate chips
  • 2/3 cup roughly chopped lightly salted almonds
  • 1-14 ounce can sweetened condensed milk

Instructions

  1. Preheat oven to 325 degrees.
  2. Line a large baking sheet with parchment paper and set aside. (See NOTE)
  3. In a large bowl combine coconut, chocolate chips, almonds and sweetened condensed milk, and stir until combined.
  4. Scoop the dough out with a cookie scoop onto prepared baking sheet.
  5. Moisten your fingertips with water and shape the cookies into mounds and pat the tops lightly to smooth.
  6. Bake for 12-14 minutes or until tips of coconut are just starting to turn golden brown.
  7. Let cool on baking sheet.
  8. Store cookies in an airtight container.

Notes

Parchment paper is critical for these cookies to turn out right.

Becki uses Blue Diamond Low Sodium Lightly Salted Almonds in the light blue bag.

Becki also uses half semi-sweet and half milk chocolate chips in the recipe.

Perhaps I could sit close to the lovely Shania Twain rose so I could lean over and inhale the beautiful fragrance between cookie nibbles.   12. I would choose the Petit Rose teacup, Kitty, and would very much enjoy one of your Almond Joy cookies. Alas, my husband does not like coconut, so I would not make them (or else I'd eat them all which would not be good). Have a good day!
