Keeping Warm With Soups and Treats


We are experiencing frigid weather here in the Dallas area. 

Our "feels like" temperature in the afternoon is 5 degrees.  I covered my shrubs with frost cloth in hopes that they will survive, and I have my shutters all closed in hopes of keeping in the heat.  My tea is in front of my electric fireplace again and I changed out the framed art to roses  in keeping my theme.  


My pretty roses teacup and teapot are from dear friends of mine, and the roses are from Trader Joe's.  The beautiful platter is from Portugal, but bought at Ross years ago.  




One of my all-time favorite comforting soups is White Chili.  My beloved hubby loved this one and it's so good!

White Chili

White Chili

This recipe came from a November 1994 Good Housekeeping magazine, but I've adapted it to a slow cooker. I've never tried another white chili recipe because this one is so good!

Ingredients

  • 1 tablespoon oil
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 teaspoon ground cumin
  • 4 skinless, boneless chicken breast halves or around 8 chicken tenders, cut in 1" chunks
  • 1 can white kidney beans, drained
  • 1 can garbanzo beans, drained
  • 1 can white corn, drained, or frozen white corn kernels
  • 2 cans chopped mild green chilies
  • 2 cans chicken broth
  • hot pepper sauce, to taste
  • Monterey Jack cheese, shredded

Instructions

  1. Over medium heat, cook the onion, garlic & cumin in the hot oil, until onion is tender.
  2. In slow cooker, combine the onion mixture with the chicken, beans, corn, green chilies & broth. Cover & cook on high for 4-5 hours, or on low for 7-8 .
  3. Serve with shredded cheese. I like to add slices of avocado & a dollop of sour cream.

Notes

You can use two cans of Great Northern Beans in place of the other two.

Pasta Fagioli Soup

Pasta Fagioli Soup

This is such a wonderful soup and I've had friends say that they like it better than Olive Garden's.

Ingredients

  • 1 can Great Northern beans, drained
  • 1 lb. ground beef or Italian sausage, browned and drained
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 2 cans beef or chicken broth
  • 2 14.5 oz. cans diced tomatoes
  • 1/2 teaspoon, pepper
  • 1/4 teaspoon, marjoram
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon hot pepper sauce, optional
  • 1 teaspoon, dried basil
  • 1 teaspoon, dried oregano
  • 3 cups of cooked small pasta, like ditalini

Instructions

  1. Combine all ingredients EXCEPT pasta, and put in slow cooker. Cook on low for 8-10 hours or on high for 4-5 hours. Add the cooked pasta before serving & stir to combine, or put a scoop of pasta into the bowl and add the soup on top. To garnish, sprinkle with parmesan cheese.

Notes

I like to keep the pasta separate so as not to get mushy in the soup.



I had been wanting to make these cookies at Christmas, but finally got to them.

Caramelitas

Caramelitas

This is an easy cookie. I did use my homemade caramels and melted them down, since I had them leftover.

Ingredients

  • 1 roll of chocolate chip cookie dough or a tray of 12 unbaked chocolate chip cookies
  • 1 cup chocolate chips
  • 32 caramels, unwrapped
  • 1/4 cup canned milk (I used about 1 tablespoon of heavy cream)
  • about 1/2 cup of pecans, chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Press the dough into the bottom of a 9" square baking dish. (Next time I will line with parchment paper).
  3. Bake for around 25 minutes, until golden but still soft.
  4. Sprinkle the top with the chocolate chips and spread over the top after they have melted.
  5. Melt the caramels with the milk until they are smooth. Spread this on top of the chocolate layer.
  6. Add the pecans. Let cool a bit and then refrigerate before cutting them.



I was able to attend Mass with Harper and her whole school, and go to her basketball game where she scored six points and her team won!  The girls are skiing with their parents and enjoying ice cream and treats.  Harper is skiing on black diamond trails...eek!!

  2. That white chili looks and sounds great, very close to a recipe my daughter made and then gave me the recipe.
    Harper, ohmygoodness! Brave and skilled to ski black diamonds!
    We are in the aftermath of snow/freezing rain. My poor plants....we spent our time shoveling yesterday before the snow/slush refroze. It was so heavy, as our temps warmed to 35°. The freezing rain turned to rain, but not long enough to melt the ice. Now what wasn't cleared will stay frozen all week, as temps bottomed out and will continue all week. Grateful we still have power, but with iced trees and lines and wind today, who knows....🙏

  3. Your rose-themed tea time in front of your cozy new fireplace - and your tv pic chosen is just perfect, Kitty. And those recipes - thank you for sharing! As you know we got a foot of snow and Franklin County had an 3 level snow emergency yesterday! Today my hub's work building is closed so he is working from home. And no WAY Harper is skiing Black Diamond areas? WOW that is really a feat!!! I tried it once. Once. Done, never skiied again after that and they could always find me in the bar area after that, haha. I was the only beginner in a group full of great skiiers. Nice thing about all this dry powdery snow is that it may hopefully help all the ski resorts who had no base snow this year to speak of. I know many have been worried about staying in business after this season - so as difficult as it is to deal with here, I am glad for them there. However flights are cancelled so no one can get to them. It's sure been weird weather. Very Bibical, if you will. Anyway, wonderful post. Stay warm, safe and cozy. Hugs. ♥

  6. What a coincidence. I made a pasta fagioli last night and it's always delicious. We'll enjoy the leftovers for tonight's dinner along side some garlic bread.

  7. Good morning, Kitty! Your tea setting is absolutely beautiful with the fireplace and the gorgeous photo on the screen! There is nothing better on a frigid day than soup. Both look delicious and certainly comfort food in a bowl! The cookies sound like the perfect treat! Wow, Harper skiing black diamonds is amazing. We went to Colorado skiing for several years. My husband and son were both excellent skiers and loved the black diamond trails. I never got past the green trails. I enjoyed sitting around the outdoor fire pits drinking hot chocolate. Stay warm and I hope your mailbox unfreezes!! ❤️

  10. I love having a big pot of soup so that we can enjoy 2 or 3 meals from it. All of your recipes sound delicious, and those Carmelita bars too! Love the rose-themed Framed Art on your screen. Makes me want spring even more :) Our grandson, who just turned 10 skiied his first black run this year too! It's such a fun sport for the whole family. I'm so glad we gave our girls ski lessons when they were little and now their whole family skis. Gotta make the most of winter. We woke up to -21 degrees last Friday morning and we're still in the deep freeze. I hope you can still travel about and didn't get the terrible snow falls that some of the affected state did get.

  11. I love pasta fagioli, and it's been a while since I have made it so I hope to make it soon using your recipe. All your recipes sound delicious, and I cook a lot in the winter and then it tapers off once it is grilling season. We are ordering Texas Roadhouse for Joe's birthday tonight. Stay warm, and I hope your shrubs will be ok. Very impressive with your granddaughter skiing the black diamond trails. My son is a snowboarder and is teaching my grandson Xavier how to snowboard.

  14. Good morning Kitty, I love your pretty roses teapot and cup and beautiful roses from Trader Joe’s! I know you’re enjoying your fireplace with this chilly weather. I made a batch of white chicken chili too, but used a rotisserie chicken from the grocery store. I love that you adapted your recipe for the slow cooker. Your Pasta Fagioli Soup looks wonderful too, as do your Caramelitas. That Harper is fearless isn’t she?! I love that your grands are all so athletic. I hope your frost cloth does the trick to keep your shrubs safe from the freezing temps. We’re getting up to 39 today and hoping the sun will melt some of our icy spots. Stay warm this week! ❤️
