Caramel Pecan Crispix Crunch


I have a wonderful New Year's party treat to share. 

My darling daughter, Molly, and I love hearts and angels, and she gifted me with two this Christmas.





She made this beautiful angel with angel wings made from a hymn, and the dress has lace on top although it can't be seen in the picture.  





She also gave me this garden angel with lights, but I like her inside for now.  She was so excited to give me both gifts.  Isn't she thoughtful?




This treat is so addictive, and also makes great gifts.

Caramel Pecan Crispix Crunch

Caramel Pecan Crispix Crunch

My friend, Joyce, gave me this recipe. She likes to share gift bags of this mix at Christmas. It makes a large amount unless somebody in your family gets ahold of it and eats it all!

Ingredients

  • 8 cups Crispix cereal
  • 2 cups pecans (I used unsalted)
  • 1 stick butter
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla (my addition)
  • 1/2 teaspoon baking soda (I increased it from 1/4 teaspoon)

Instructions

  1. Preheat oven to 225 degrees.
  2. Put cereal and pecans in a large roasting pan or a large sheet pan with sides that has been coated with cooking spray.
  3. In a large saucepan melt butter, sugar, corn syrup, and salt. Let mixture come to a boil, stirring occasionally. Remove from heat and stir in vanilla and baking soda. Mixture will foam up.
  4. Pour the mixture from the saucepan over the cereal and nuts and mix well, coating evenly.
  5. Bake for 1 hour, stirring every 20 minutes. I put a timer on so that I don't forget!
  6. Pour onto wax or parchment paper to cool and then break into pieces.
  7. Store in an airtight container.
  8. Make sure you hide it away if you want to give it as gifts!

Notes

You can use Rice Chex in place of the Crispix, and also sliced almonds or walnuts in place of the pecans.







My daughter had an after Christmas party so that all her kids could be there.  Another after Christmas party will be this coming weekend for other family members.  It's been unseasonably warm with temperature's in the 80's, although a cooldown is coming.
