Chicken Tetrazzini and Blueberry Streusel Pie




It was about to storm, but I was able to set up a tea table before the rain came. 



My lady vase is holding some pentas from my front yard.  She's a faithful happy vase for me.  My cottage teapot was one that my son Mike had to repair on the bottom front corner, as it came with a chunk out and he did some magic and painted it perfectly for me several years ago.



My friend Pat and I saw this Royal Worcester Lavinia teacup at an antique shop years ago, so like good friends, we bought one for each other!



We are having my favorite blueberry streusel pie recipe.  Would you like some vanilla ice cream or whipped cream with your slice?  The pie recipe can be found here.





This is a favorite casserole that I made for Mike and his friend, while they're working on a video game for a company.  Mike is the artist and his friend is the programmer.  I'm keeping them well fed when they take their dinner break.



This is such a comfort meal!

Easy Chicken Tetrazzini

Easy Chicken Tetrazzini

This is a family favorite and is great to take to someone in need of a comforting meal.

Ingredients

Easy Chicken Tetrazzini
  • 3-4 chicken breasts (See NOTE)
  • 16 ounce package spaghetti
  • 1/4 cup butter
  • 8 ounces mushroom, sliced
  • 2 cloves garlic, minced
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can low sodium chicken broth
  • about 1/4 teaspoon dried thyme leaves
  • 1/2-1 cup shredded cheddar cheese
  • Parmesan cheese, for garnishing the top

Instructions

  1. Sprinkle the chicken breasts with salt and pepper and bake for about 30 minutes at 375 degrees. Let cool and then chop.
  2. Cook the spaghetti noodles in boiling salted water, but under cooking them by a few minutes. This just makes them less mushy when they cook in the oven later on. Drain and put in the bottom of a 9 x 13" pan. Add the chopped chicken on top of this.
  3. Melt the butter in a large skillet. Add the minced garlic and the sliced mushrooms and sauté for several minutes. Add the two soups, chicken broth and the thyme and bring to a boil. Pour this mixture over the spaghetti and the chicken.
  4. Sprinkle on the cheddar cheese and then the Parmesan. Bake at 350 degrees for about 30 minutes, until heated through and bubbly.

Notes

I sometimes use leftover rotisserie chicken in place of cooking chicken breasts.

I need a “Mike” in my life 😊 I saw a pretty teapot on Etsy but it had a huge chip in it, which was more than I wanted to tackle to repair. I know he and his friend appreciated your delicious meals.   7. I used to make a recipe very similar to that tetrazzini, Kitty, and totally forgot about it! It is a great comfort food. And I'll take ice cream with my streusel, thank you! I love your comment of how you & your bought each other the teacup, lol! Good one! The lady vase is a happy feature on your table, and boy, we could use some rain here.   8. Kitty, The little lady vase is darling and so is the teapot. Mike did an excellent job bring it back from the damage. Yum for the casserole and just in time for fall, we love them here. Sweet teacup and I will take ice cream with the delicious pie! Happy September Kitty.

  12. Happy September, Kitty! I would love to have a slice of blueberry streusel pie for dessert. The chicken tetrazzini looks delicious, and every Thanksgiving I say that I will make it with turkey but don't. Ha Ha

  13. You had me at Chicken Tetrazzini Kitty! It is a very favorite of mine and your recipe shortens the recipe by using the 2 soups instead of making the white sauce~I bet it tastes really good too! Mike did an amazing job repairing your teapot, wow! I have a lady vase too and think of you every time I see it :)
