Easy Red White and Blue Ice Cream Pie





It's too hot to bake! I found some ice cream in the perfect patriotic colors, and if you want you can have some crackle sauce on your piece.  The dishes are Liberty by Coventry and I found them so inexpensively at a thrift store years ago.  The dinner plates and bowls are like the mugs, with only the salad/dessert plate being different. 



This is the ice cream that I found at Target!

I tried to carefully scoop out the flavors into a pretty pattern, and just put them in a prepared graham cracker crust.




My grandson, Riley, who was home on leave from South Korea, stopped by to see me on his way to El Paso, where he will be stationed.  He bought a used truck and it is so very nice!  Wasn't that so thoughtful of him to visit me on his way?  What a dear, sweet young man he is. 
On the top right, little Hayden went to camp and was chosen for the rodeo!  She said that she is never going back unless her sister goes next year.  I had spent the night with Harper, while her parents were in Austin and then had to pick Hayden up.  When Hayden came come, she ran in the house and hugged Harper so tightly, and I stood there and bawled my eyes out to see the love that they had for each other.  
In the middle photos, Harper and I went shopping at Michaels and Hobby Lobby and of course the Fall decor is out.  Harper is a fun shopper because she loves to look at everything and really thinks about her purchases. 
In the bottom photo, my son and daughter-in-law made reservations for Harper and I to celebrate what would be my 55th wedding anniversary.  Harper was the perfect date because she really enjoys food. We ordered filet mignons with frites and salad.  She ordered medium rare, and I ordered medium.  That girl has adult tastes.  She said, "Nana do you like key lime pie?" She already knew how good it was!   I said that I loved it, and so we ordered one to split.  The waiter asked if it was a special occasion, probably thinking it was her birthday, and I explained what day it was.  He brought out the spectacular key lime pie!!  What a wonderful day I had to celebrate with my sweet Harper.

  1. Kitty, how sweet that our grand kids think of us. I know you enjoyed them. Two of my great grands are boys and they have such love for each other it makes me misty eyed too. What a special treat for you and Harper. Anytime that is spent with family is a treasure and key lime pie is so good. I will have to check my Target for patriotic ice cream now. Have a safe and Blessed 4th...it is so very hot here in Florida and I know Texas is about the same. We lived near Dallas for about 10 years. Hugs!

    I would probably eat the chocolate crackle sauce on its own. HA!

  6. Aww Kitty, Hayden are Harper are such sweet, cute girls. What a fun and delicious dinner to celebrate your anniversary! I would enjoy shopping with Harper too. It’s way too hot to bake here or even be outdoors. I’m dashing outside to walk the dogs at 6:30am and returning to water and do some garden chores, back inside by 9am…to say it’s pore-cleansing is an understatement!   8. Celebrating your anniversary is the sweetest thing I've heard, and such a wonderful idea. Im so glad Hayden made the perfect partner for your experience! Her sister's love for her is also the sweetest thing. You have really great grandkids, Kitty. I love that Riley came to see you before returning to base.

    What a sweet idea to celebrate your anniversary with your granddaughter. She really was the perfect date. I love how your grandchildren make you feel so very special.
