Today is my birthday and I'm celebrating because everyday is a gift!
I used to make these pancakes for my kids when they were young, in the 1970's-1980's, and the recipe is from my Mother's In The Kitchen, from the La Leche League, of which I was a member and a leader. Cottage cheese is being used in so many recipes nowadays and I thought to myself that we were in tune with adding more protein way back when!
Isn't this the prettiest violets tea set, from my friend, Michele, from The Nest at Finch Rest, from several years ago? The teapot pours like a dream, and I always think of Michele when I use it.
I'm using all things violets for my birth month, and both of these are Royal Albert teacups.
I'm sipping on Tower of London by Harney and Sons, which is a Chinese black tea with pieces of stone fruit, and finished with oil of Bergamot and honey.
These pancakes are very light in texture and they're topped with some microwave jam from this recipe for Microwave Jam, but instead of strawberries, I used blueberries.
Yield: Makes about 2 dozen 3" pancakes

Cottage Pancakes
When I made this recipe for my kids, they never knew that cottage cheese was in them! You can use an electric mixer, but I found that a blender works the best.
Ingredients
- 6 eggs
- 1-1/2 cups cottage cheese
- 1/2 teaspoon salt
- 1/2 cup uncooked oatmeal (original recipe had flour, but you could also use almond flour)
- 1/4 teaspoon baking powder
Instructions
- Put the eggs in a blender and whip. Add the rest of the ingredients and blend until smooth.
- Drop the batter onto a lightly greased griddle or skillet and cook until they are browned. I found that I needed to use more butter in my skillet, in between batches.
- Serve hot with syrup or berries.
Notes
I made half of this recipe, and still had extras. You can freeze the pancakes after they are cool, by placing them on parchment paper on a baking sheet. Take them out as needed and reheat.

ReplyDeleteThe pancakes sound delicious! And I love your beautiful teacups! I really enjoy putting cottage cheese in my smoothies. I know it may not sound too appetizing, but it truly is so good! I use sugar-free, natural peanut butter, cottage cheese, a banana, almond milk, honey, ice, and at the end, I add cacao nibs. SO good!
