Refrigerator Bread and Butter Pickles





My patio lunch for today highlighted these bread and butter pickles. 

Our temperatures have still been in the 80's, which has been so wonderful.


My lunch consisted of these colorful mini peppers, filled with Pawleys Island Palmetto Cheese Spread with Jalapenos, cottage cheese, and egg salad.  In between, I cut salami rolls that were filled with provolone, and put some of the refrigerator bread and butter pickles in a punch cup.   Punch cups make for wonderful serving vessels.


These pickles are so good, so easy, and would make great gifts!  The recipe is from bloggy buddy Lynn at Happier At A Pig In Mud.  Thank you, Lynn, as these pickles are so good!

Refrigerator Bread and Butter Pickles

These supposedly last for several months in the fridge.

Ingredients

  • 7 C sliced, unpeeled cucumbers
  • 1 C sliced onion (I used a bunch of green onions, sliced)
  • 1 C sliced green peppers (I used red pepper)
  • 1 C cider vinegar
  • 2 C sugar
  • 1 Tablespoon celery seed
  • 1 Tablespoon salt

Instructions

  1. Mix everything together and let sit on counter until liquid is created. Give it an occasional stir or shake.
  2. Cover and place in refrigerator.
  3. Let sit for 5 days so flavors can mingle.



My little yard was recently given the honor in my neighborhood of the July Yard of the Month.  I was so surprised and the committee gave me a gift card to a local nursery.





With my gift card burning in my purse, I bought this iron garden fairy for my backyard, which the nursery gave to me on sale.  I had been looking at her for the past two years, and luckily there was one left.  She has a little opening between the fairy wings, and I put some solar lights in there.  I may place a plant at sometime, but for now, it's the solar fairy lights.

  2. Your lunch sounds so light and summery Kitty! Don’t you love Palmetto Cheese? We always keep a tub in our fridge. I know those refrigerator pickles must be good, Lynn is the pickling and deviled egg queen. 😊 We enjoyed some cooler temps in the 80s last week but we’re back to mid 90s and triple digits this coming week. Enjoy your sweet garden fairy and congrats again on yard of the month! ♥

  16. Congratulations, Kitty! The fairy you bought is so pretty and looks perfect in your back yard garden. Your home does look so pretty from the front too! Love those pickles! I have a very similar recipe that my mother always made in the late summer with garden cucumbers. So good!
