Layered Pumpkin Dessert

My Grace's Tea Ware teacup is perfect for so many occasions, but looks so pretty with my tea cozy.

I made this cute cozy from a vintage look print .

My water aerobics group had our Halloween party and I brought this layered pumpkin dessert to share.  It's great for a group and would be perfect for Thanksgiving, too.


I went as a grandma that is carrying her baby grandchild on her back.  My son, Mike, painted in features on the mask, added glasses, mittens to cover her plastic hands,  and a wig.  We bought this costume at a garage sale several years ago.  

There were four categories to vote for and we were the winners.  We really do have a fun group!  There were about 30 ladies and everyone dressed up except one.

Layered Pumpkin Dessert

Layered Pumpkin Dessert

I adapted this recipe to make for a larger crowd and made it with extra spice. This is a wonderful dessert and especially good for people who don't like pumpkin pie. The crust doesn't get soggy even after a few days in the fridge.

Ingredients

  • 1-1/2 cups flour
  • 3/4 cup butter, softened
  • 1 cup pecans, chopped
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 4 cups whipped topping, divided
  • 2 ½ cups milk
  • 3 pkgs white chocolate (or vanilla) instant pudding mix (3.4 oz size)
  • 15 oz can pumpkin puree
  • 2 teaspoons pumpkin spice

Instructions

  1. Layer 1:
  2. Mix flour, butter and 3/4 cup pecans together. Press into a greased 13 x 9" pan. Bake for 15 minutes at 350 degrees, then remove and let cool.
  3. Layer 2:
  4. Blend cream cheese and powdered sugar, add 1 cup of the whipped topping, then spread over cooled crust.
  5. Layer 3:
  6. Mix milk, pudding mix, canned pumpkin, pumpkin spice and 1 cup whipped topping until smooth. Spread over top of layer 2.
  7. Layer 4:
  8. Spread remaining 2 cups of whipped topping and sprinkle pecans.
  9. Let chill for 3 hours or until set. Serve chilled.

Notes

I found the white chocolate instant pudding at Wal Mart, and it's made by Hershey's.




My granddaughter, Cissy had her last Fall pep rally and the Varsity girls were able to invite someone on the staff to participate and Cissy chose her mom,  my daughter, Molly.  The routine was to the Cotton-Eyed Joe, and it was so cute!  I'm so blessed to be able to attend so many wonderful events.
