Pumpkin Delight and Easiest Taco Chicken



 

My group of friends from our fitness club had our Halloween luncheon and I brought this dessert.  

We get together every two months and everyone signs up to bring something, and we always have a wonderful array of great food.  The Pumpkin Delight was a hit and it feeds a lot of people. My Pumpkin Spice tea was perfect with the leftover slice that I brought home.

Pumpkin Layered Dessert

Pumpkin Layered Dessert

This is a wonderful Fall dessert!

Ingredients

  • Crust:
  • 1 cup flour
  • 2 tablespoons sugar
  • 1/2 cup butter, softened
  • 1/2 cup chopped pecans (or walnuts)
  • 2nd Layer:
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • About 6 ounces of frozen whipped topping, thawed
  • 3rd Layer:
  • 16 ounce can of pumpkin
  • 2 small boxes of vanilla instant pudding
  • 1 cup half and half (I used 1/2 cup of heavy cream and 1/2 cup milk)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 4th Layer:
  • Another 6 ounces of frozen whipped topping, thawed
  • Chopped pecans

Instructions

  1. Crust:
  2. Mix together ingredients and pat into a 13 x 9" pan. Bake at 350 degrees for 15 minutes or until golden brown. Let cool.
  3. 2nd Layer:
  4. Beat cream cheese and sugar well. Fold in the 6 ounces of whipped topping and spread on cooled crust.
  5. 3rd Layer:
  6. Beat these ingredients together and spread the pumpkin mixture over the cream cheese layer. Chill for 1 hour.
  7. 4th Layer:
  8. Spread about 6 ounces of whipped topping over the pumpkin layer. Sprinkle the chopped pecans (or walnuts) on top. Chill.


I made the easiest taco chicken ever!  I like to use my heavy cookware in my oven instead of a crockpot for many things.  


Here's how the chicken turned out cooking all day on about 220 degrees.




Yield: Enough for about 3-4 meals

Easiest Taco Chicken

I'm into easy meals lately and nothing could be easier than this! I made chicken taco salad and another time, chicken tacos.These Fall leaf tortilla chips came from Trader Joe's. Aren't they colorful?

Ingredients

  • 1 very large frozen boneless, skinless chicken breast (or 2 smaller ones)
  • 1 package of taco seasoning (I used low sodium)

Instructions

  1. Place your frozen chicken breast in your slow cooker, and sprinkle on your taco seasoning mix. Cover and cook on low for about 8 hours or on high ,or about 4 hours. Since my chicken was frozen it produced enough liquid while it was cooking. I then just shredded it right in the pot. If you feel like you need some liquid,, just add a little water while cooking.

  8. Your baby costume is adorable, Kitty! I once dressed up a baby for Halloween by wearing PJs to the office. It was the most comfortable office outfit. LOL.

  10. My mouth was watering as I read your dessert recipe Kitty, it sounds so good! I make a similar chicken in the slow cooker with salsa, I’ll have to try your taco seasoning method. I’m all about easy these days! How fun that your group gets tofether so often, how much fun! Happy November~

  20. I love Grace's Teaware, too! It's one of my favorite makers these days, especially for teacups! I've never seen the black and gold. Wowza!!!

    The party looks to have been a slammin' success, and all the ladies look terrific in their costumes! Yours is hilarious!!! I thought that was a person in front of you at first!!! Great pic!

    I'm a big ol' chicken taco fan, and you're right...your recipe is the easiest around! And the aroma that must fill the house!!! I don't mind having the oven on all day on these cool fall days at all, so this is a winner all around!
