We had a very dear friend pass away very unexpectedly and my son, Mike, asked if I would make a bundt cake for the family.
The death was not due to Covid, but so very sad. Mike choose the flavor of cake that he thought that the friend would've liked. I also made two mini bundts to have for later.
My Royal Albert Woodland Series Robin teacup is especially pretty for Fall.
My Autumn cross stitched piece was a project from several years ago.

Connor is back from Saudi Arabia and on American soil. Soon he will be home for a much deserved visit, and we are so looking forward to it! Thank you to everyone who kept him in your thoughts and prayers.
Yield: 1- 10-12" bundt cake
Applesauce Spice Cake
I will always think of our friend when I make this cake.
Ingredients
- 1 pkg. spice cake mix
- 1 pkg. instant vanilla pudding
- 4 eggs
- 1/2 cup water
- 1/3 cup cooking oil
- 1 cup applesauce
Instructions
- Preheat oven to 350 degrees.
- In large bowl, combine all ingredients and beat for 4 minutes.
- Bake in greased and floured 10-12" bundt pan. I used Baker's Joy spray.
- Bake for 55-60 minutes or until cake tests done.
- Cool in pan for 10-15 minutes; turn out on wire rack to complete cooling.
- I piped on Cream Cheese Frosting from my recipe found here ,by cutting the end off of a decorating piping bag.
