Easiest Scones Ever


I'm sharing the most fluffy, fabulous scone recipe today by my little waterfall.

 


This teacup is granddaughter, Cissy's, very favorite.  I have to admit that I love it, too.


This teacup was one of my late beloved mom's and is a Royal Albert.

Easiest Scones Ever

These scones are not your typical scone, with a crunchy exterior and tender inside. These are fluffy, and tender throughout. Tina calls them Lemonade Scones, and cuts hers with a circular cutter, but I did the traditional cut into wedges.

Ingredients

  • 3 and 1/2 cups self-rising flour
  • 1 cup heavy whipping cream
  • 1 cup of carbonated lemon-lime soda (Tina's recipe calls for lemonade)
  • pinch of salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Sift flour and salt into a large bowl.  (I personally just whisk together).
  3. Pour in the lemon-lime soda and the heavy cream and mix to a soft dough.
  4. Tip dough out onto a floured surface and knead for a few minutes.
  5. Cover dough with plastic wrap and let rest for 30 minutes.  (Tina says that this allows the gluten to relax and result in light, fluffy scones).
  6. Divide the dough into two circles and pat out into a circle, about 3/4" high.  Cut each circle into sixths, and place together very closely on a parchment lined baking tray and brush the tops with a little heavy cream. 
  7. Bake for 15-20 minutes or until scones are a light golden brown.

Notes:

You could always add some raisins, dates, chocolate chips, dried cherries, etc.



My youngest son and daughter-in-law needed my help this past week, and Hayden created this tree for her lunch.


I made Harper this cute owl sandwich and she made the veggie tree.


Hayden spent the night at my house one of the nights, and she loves to put on make-up!


My son took Harper to her Meet the Teacher night at school.



Today marks 8 years that my beloved hubby passed away, and I invited my family for a brunch.  These are my peeps that were able to come and we had a wonderful time.

Look at all of your babies. Just growing up so fast Kitty. I got tickled at Hayden and her makeup. YES girl...we go through that quite a bit a my house too!     I know you miss your hubby. 8 years! I recall when you were faced with the challenges of his illness and then his passing. We've been friends a long time. I'm glad you have your children and their families near by.
