Is anyone in the mood for Strawberry Shortcake? Although I would never turn down a piece, in all actuality, I prefer a sponge cake or even an angel food cake for my strawberries.
This pretty snack set was a gift form my friend, Linda, and it's great for breakfast or for dessert. The pretty vintage tablecloth was cut from one that my friend Joy gave me from her late mother-in-law. it had some stains on it that I could not get out, so I re-made it.
My sister sent me this pretty Grace's Teaware teapot. I have always loved strawberry accessories, and even had a strawberry shaped chandelier in a previous home. I so wish that I had taken it with me!
This pretty teacup is called Alpine Strawberry, by Roy Kirkham. Can you see the bees on the cup and saucer?
Yield: 1- 9" cake
Sponge Cake
This recipe was cut out of a Columbus, Ohio newspaper years ago. Even when I was a teenager, I loved saving recipes. It's a wonderful cake and yes, spongy in texture. It's perfect for strawberry shortcake, or even a fudge or caramel frosting on top. Ice cream and some hot fudge sauce would also be wonderful. My mom loved this cake!
Ingredients
- 2 eggs, at room temperature
- 1/4 teaspoon salt
- 1 cup sugar
- 1 teaspoon vanilla
- 1/2 cup milk, boiling hot
- 1 tablespoon butter
- 1 cup flour
- 1 teaspoon baking powder
Instructions
- Grease and flour a 9" cake pan, either round or square.
- Preheat oven to 350 degrees.
- Beat eggs until very light in color. While you're doing this, you can heat your milk and butter together in the microwave or in a saucepan, until boiling.
- Beat in very well the salt, sugar and vanilla.
- Slowly beat in the boiling hot milk and butter mixture.
- Sift the flour and baking powder together in a bowl (I just whisk together), and beat into the egg mixture.
- Pour very quickly into the prepared pan. Bake immediately for 25-30 minutes, or until the top of the cake springs back when lightly touched with your fingertip.
Notes:
A quick way to bring eggs to room temperature is to put them in a bowl of hot water for about 5 minutes.

I love your strawberry teapot and teacup! So cute. I too tend to prefer my strawberry shortcake with either angel food or sponge cake. Though I did make it with pound cake last week and enjoyed that too. Pinned.

No wonder you wish you had taken that chandelier! How unique to have a strawberry one. Your cake looks so delicious. I also love ladyfingers with strawberries, but freshly baked ladyfingers are hard to find these days.

ReplyDeleteBrace yourself, but I have never had a sponge cake. I’ve read about Victoria sponge cakes in the British novels that I enjoy, but I’ve never had it, or any other type of sponge. Yours looks beautiful, and I have been craving strawberries. I love your strawberry dishes.
