It is so cold here in Texas...brrrrr! Come inside and sit by the fire and we can have a yummy muffin and a cup of tea to warm ourselves up.
This darling teacup was given to me from a friend. Isn't it darling? I'm having a cup of very berry white tea. The mug mat and the little tea container was made from a friend. It's such a cheery cherry pattern!
When you break open the warm muffin it oozes with chocolate!
Yield: I got 15 regular muffins + 2 jumbo muffins
Cherry Chocolate Cheesecake Muffins
I saw a recipe for this in my local utility magazine, but changed it up.
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar
- 2 eggs
- 1/4 cup butter, melted and cooled
- 1/2 teaspoon almond extract
- 3/4 cup milk
- 1 cup dried cherries
- 3 ounces cream cheese, cut into chunks
- 1 cup chocolate chunks (I used semi sweet, but you can use milk chocolate)
- Preheat oven to 400 degrees. Coat the muffin tins with a baking spray or line with cupcake/muffin liners.
- In a small bowl, stir together the flour, baking powder, baking soda, and salt.
- In a large bowl, whisk together sugar and eggs until blended. Whisk in melted butter, then add almond extract and milk.
- Stir in flour mixture until just mixed. Gently fold in cherries, cream cheese and chocolate chunks.
- Fill muffin cups 3/4 full and bake the jumbo muffins for 20-24 minutes, and the regular sized muffins for 17-18 minutes, or until they spring back when touched.
You can use 1 cup of diced fresh strawberries in place of the dried cherries.

Kitty, I copied this recipe as I’ve done for many of your wonderful recipes, sounds and looks delicious. But I did notice the ingredient list is missing the number of eggs, and the cream cheese and cherry amounts. Your tea tables are always so cute, something warm and wonderful on this cold Monday! Thank you!ReplyDelete

Way to go, Cissy! Those are both great events she will always remember. Kitty, your muffin recipe sounds wonderful. I love both chocolate and cherries and may need to try this. I think I have all the ingredients already!ReplyDelete
I sure hope you have power still. I have so many friends and family in TX....it's very weird to see these weather patterns. Here in WV, we're having rain and ice storms, and with literally no sun since the first of the month, the ground is so wet that there are major power outages for trees falling all around us. We are city dwellers, so so far so good. Take care.
Sitting here drinking Harney & Sons English Breakfast tea looking at those delicious perfect "Valentinesy" treats. Yum.ReplyDelete
Whoo hoo on Cissy getting freshman cheerleader!!! I will have to let you know all about Reagan's State qualifying her 4 teams she's on did yesterday.
The muffins look so good and yummy. Congrats to Cissy and the grandkids are just precious. It's such a cold and snowy winter for a lot of us. Stay warm Kitty.ReplyDelete
Yum! Kitty, your muffins look so good, and pretty too. Congratulations to Cissy! Cheer is such a great sport for young ladies. Keeps them active and in shape. I heard it was cold down in TX. We are having an ice storm today so I haven't posted my tea. I will wait for tomorrow because one never knows... Hugs, SandiReplyDelete

Kitty, it's so cold here and it snowed! We didn't think we'd get any and went to bed only to wake up to everything covered in about an Inch of white. Pretty table with your lovely flowers and tea cup. Congratulations to Cissy and her achievements. Always love seeing your grands, they grow so fast! Stay warm..........ReplyDelete
Oh how cozy this setting is Kitty! I have been worrying about you and all my Texas friends, Brrrr! I hope you have power...the tea sounds delightful and oH those muffins, yummy!ReplyDelete

Way to go cissy! Kitty, your cherry chocolate muffins look divine with chocolate oozing out. I hope all is well with you. We hear such bad news about people in Texas.ReplyDelete
Congratulations to Cissy! I know you must be so proud of her! And, those muffins look amazing! Oh, dear friend! I hope you are not too cold or affected by the awful weather issues. I am praying for you and hoping all is well.ReplyDelete
These look soooooo yummy, and so do the overnight sticky rolls in your next post. I can't get over Texas and the winter storm. My best friend lives there, and she left and went to Florida before it hit. Her daughter lost power, and her sister in San Antonio had to boil water. I'm happy that you never lost power! I will definitely try this recipe.ReplyDelete
