Oatmeal Cherry Cookies



Seven years ago, on August 16th, my beloved hubby passed away.  We always used this Williamsburg reproduction teapot, that my late Great Aunt Kitty gave us, which had been hers.    Oatmeal raisin cookies are my all-time favorites, but this is a new twist with dried cherries.  I'm thinking of memories of him today.
 
My pretty cherry teacup is my choice for today.
 
We had gone to Williamsburg, VA for our honeymoon, and maybe that's why Aunt Kitty gave us this teapot of hers.

Oatmeal Cherry Cookies

Oatmeal Cherry Cookies

Ingredients:

  • 2 sticks butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 t. vanilla
  • 1/2 t. almond extract
  • 2 cups flour
  • 1 t. salt
  • 1 t. baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 3 cups oatmeal
  • 2 cups dried cherries

Instructions:

  1. Place the butter, brown sugar & sugar in the bowl of electric mixer, fitted with paddle attachment. Beat on medium speed for about 30 seconds., until the mixture is fluffy. Turn down the speed to low & add the eggs & the extracts. Beat for about 30 seconds longer.
  2. In a mixing bowl, sift together the flour, baking soda ,salt, cinnamon and cardamom. Add to the mixer, while beating on low speed & beat for about 15 seconds, stopping the mixer once to scrape down the sides. Add the oatmeal & cherries & beat for about 15 seconds longe
  3. Using an ice cream scoop, scoop the dough & put onto parchment-lined baking sheets. Refrigerate the cookie balls on the sheets for about an hour. Gently press out the dough with the back of your hand. Bake at 350 degrees for 12-15 minutes. Makes about 30 cookies.
  4. NOTE: Often I will put the shaped cookie balls on the baking sheets & put into the freezer. When the cookie balls are frozen, I transfer them to freezer-proof plastic bags. When I'm ready for a warm cookie, I put the cookie on parchment and bake for a few extra minutes.

It is fitting you pour yourself a cup of tea from the lovely teapot your Aunt Kitty gifted you. I must say the setting is a vision splendid in red, white and black. The giant red and white polka dot chicken has caused me to smile.....such fun. Your tablescape gives me a sense of tranquility and coolness, though I am supposing that deep in the heart of Texas it is very, very hot. Those Oatmeal Cherry cookies look delicious!

  2. Thinking of you today sweet Kitty. Your spot by your garden waterfall looks so serene and peaceful, the perfect spot for a cup of tea and a cookie! I love the addition of the dried cherries, I'm more of a dried cherry/cranberry fan than raisin. Love your sweet teacup too. Happy Monday ♥

    My husband and I ate an entire bag of cherries in 2 days. I am so full with cherries in me as I type this I could burst.

    I love putting dried cherries in baked goods - made a cherry white chocolate scone with them but it's been a very long while. Your cookies I bet were so good. Great tip about freezing ahead too - then you are always ready for teatime!!!!

  14. The cookies sound wonderful and cherries might be a good substitute for raisins for those who don't care for raisins. I love them all. Yesterday, I received the gift of freeze-dried blueberries and now I am wondering if they could be used interchangeably.

    I know that your memories are sweet. My belief is that we must take the time to honor the days that stand out...the good and the not so good. How blessed you were!

  17. Aw, sweet friend, it is so heartbreaking to think of how much you miss him! I wish the Lord would have seen fit to leave him with you for many more years. It is so hard to understand these things and why some prayers are answered and some are not. Maybe one day when we get to Heaven, it will all make sense. But then again, we will be reunited with those we love, and maybe the memories of the griefs down here will be long forgotten. We know Jesus will wipe away all our tears. What a day that will be! May He be extra near to you today and hold you close to His heart. Praying for you.

  18. Oh, Kitty, so sorry. It must be so hard....When we are left behind it leaves such a hole in our heart, but I truly believe our loved ones are watching over us until we meet again.   22. They sound delicious with dried cherries, Kitty! I prefer to use dried cherries in anything over raisins. I just love the taste. Copying this recipe :) What a beautiful teapot and memory of your honeymoon ♥ We received a beautiful coffee and tea service in pewter from my in-laws when we were first married too :) It also has a lovely wooden handle like yours.
