After Easter Treats and a Sweet Potato/ Beef/Cheese Bowl



I'm having an after Easter tea. 

 Do you see anything strange that popped up in my shade garden?



I made Mary's easy Carrot Cake into cupcakes, and you can find the recipe here.  I also made chocolate covered peanut butter eggs that I've been making since my four children were little.  You can find that recipe here

I received this beautiful teacup from Mary for my birthday.  I've never had a teacup with a reticulated saucer.  Isn't it pretty?


This Harney and Son tea is a favorite of mine.



Now you can see this unusual sculpture that's in my garden!  My son, Mike, sculpted a rendition of his head when he was in 10th grade.  He was cleaning out things recently and was going to throw it away.  My son, Tim, was over at the time, and he said, "Mom, he can't throw that away!"  I took it out to the shade garden and "planted" it on top of an overturned pot.  It looks like it's peeking through the fern and makes me smile.  In my little iron wheelbarrow, I have a barricade of sticks in the soil because something started eating my geranium.  Oh, those pesky critters!




This meal is so easy and I'll be making it again!  If you have never tried Good Culture Cottage Cheese, it's really excellent and contains only pure ingredients.  It's very high in protein and low carb.

Sweet Potato/ Beef/ Cottage Cheese Bowl

Sweet Potato/ Beef/ Cottage Cheese Bowl

This is a recipe that went viral and I had to try it! It's so good. I found a short- cut by using frozen roasted sweet potatoes.

Ingredients

  • 1 lb. ground beef
  • 2 tablespoon taco seasoning
  • 1-12 oz bag of frozen roasted sweet potatoes
  • 2 cups cottage cheese
  • 2 avocados, sliced or cubed
  • Hot Honey (I used Mike's Hot Honey)

Instructions

  1. Brown the ground beef in a skillet. Add the taco seasoning and a little water.
  2. While the beef is cooking, cook the frozen roasted sweet potatoes in the microwave, and then set aside.
  3. Build your bowl by evenly adding the beef, cottage cheese, sweet potatoes, and avocados. Drizzle generously with the Hot Honey.
  4. Enjoy!

Notes

In place of the frozen roasted sweet potatoes, peel, and cube two sweet potatoes and toss with some olive oil, salt and pepper and a little cinnamon, and roast in the oven until they're golden and crispy.

The frozen roasted sweet potatoes made this so easy!

If you don't like cottage cheese, just use some shredded cheddar cheese.

The Hot Honey really adds a great taste to this dish.

This dish can easily be cut in half.

  5. I love that head sculpture! He is so talented. Hope your Easter went well this year. I have yet to try that H and S tea. Once I get some of mine used up I may need to try it. The teacup Mary gifted you is so beautiful. And you make your own peanut butter big ole egg candy???? Oh YUM. I looooove choc and peanut butter together. Gotta try doing that one of these days.
