White Chocolate Chip Macadamia Coconut Cookies


I'm having a tropical party on my patio today.  

Won't you join me?  I've made us some cookies and coconut ice tea.  It's way too hot to drink any hot tea now with all of our 100+ degree days.


 

My son, Kevin and Daughter-in-law, Kristen gave me a 6 month tea subscription, two teas per month,  for Mother's Day from this company.  It's so fun to see what will be coming each month.   They let you do a flavor profile at the beginning to get to know your favorites.

White Chocolate Chip Macadamia Coconut Cookies

My recipe is adapted from Ghirardelli. These would also be great with dried cranberries around Christmas time, and maybe with walnuts instead of the Macadamia nuts.

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 1-1/2 cups sugar
  • 1 cup brown sugar
  • 2 eggs, room temperature
  • 1-1/2 teaspoons vanilla
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups (11 ounces) white baking chips
  • 1-1/2 cups Macadamia nuts, chopped
  • 1-1/2 cups coconut flakes, optional

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream butter and sugars until fluffy. Add vanilla and the eggs, one at a time, and beat well.
  3. Blend in flour, baking soda, and salt, Stir in white chips, nuts, and coconut.
  4. Drop by rounded teaspoon onto parchment paper or ungreased baking sheets, or by a large scoop for bakery size cookies.
  5. Bake for 10-12 minutes for the small cookies, and around 18 minutes for the large ones, checking until just set.
  6. Remove and cool on wire racks.

  6. I've never had macadamia nut cookies with coconut. Sounds really, really good! Seems like they would have something of a macaroon-like feel in the mouth along with the great flavor. I absolutely love coconut, so you get a big ol' YES from me on this one!

    I hope the temps flatten out soon. It's going to be BAD here the next 10 days. I'm just going to brace myself and keep the ice bin full!

  7. Oh my mercy those cookies look so yummy. I just pinned your recipe. I love anything with nuts in them. What a nice gift Kitty. A subscription for tea is a very thoughtful gift. I didn't even know you could do such a thing. I hope you are trying to stay cool. Hot and humid.
