Copycat Payday Bars



My friend, Marsha, at The Better Baker made these Copycat Payday Bars recently.

I had to try them and share with my family for Easter.  They were a big hit!  I saved a few to have at home.


I'm using this brown transferware stacked teapot for one that a neighbor gave to me.  

 


Marsha recently sent me this pretty tea towel and some teas to enjoy.  She saw it while shopping and thought of me.  Isn't it beautiful? It'll be one that i hang for decoration as it's too pretty to use.  


Darling Cissy FINALLY got her braces off after 3-1/2 years!!  Doesn't she look beautiful??

Copycat Payday Bars

Copycat Payday Bars

These little bars are really tasty, and such an easy candy to make. Cut them small, and you'll have lots to share.

Ingredients

  • 1-1/2 jars (16 ozs. each) dry roasted lightly salted peanuts
  • 5 tablespoons butter
  • 1 can sweetened condensed milk
  • 2 cups mini marshmallows
  • 1 bag (10 ozs.) Reese's peanut butter chips
  • 1 teaspoon vanilla
  • pinch salt

Instructions

  1. Spray a 9 x13" pan with non-stick baking spray.
  2. Add 1 jar of peanuts in even layer in the bottom of the prepared pan; set aside.
  3. In a large saucepan, melt butter over medium/low heat.
  4. Add marshmallows, sweetened condensed milk and peanut butter chips to saucepan; stir well.
  5. Continue cooking over med/low heat for about 5 minutes, stirring frequently.
  6. Remove from heat; add salt and vanilla and stir to blend.
  7. Carefully pour this mixture over the peanuts in the pan, using a spatula to even out marshmallow mixture.
  8. Sprinkle a half jar over the top of this mixture, pressing lightly into the filling.
  9. Cover and refrigerate at least 4 hours. Cut into bars or small squares.

  1. Oh those sound yummy! I bet Cissy was so glad to finally have her braces off; my middle son had them for a very long time and kept playing with his teeth for weeks afterwards remarking on how smooth and weird it felt to not have metal all over his mouth.

    Oh my what a smile. I didn't think it possible to be any better. So happy for her. I remember when my daughter had her braces removed...it was a celebration.

    Your towel and teapot are so pretty -- such nice gifts!! Those PayDay bars look and sound delicious; can you believe I've never had a PayDay? I'm not a big candy bar lover, for the most part. Maybe it's just me, but I think Cissy looks very much like you -- the hair color, eye color, and now her smile. :D Thank you for sharing this recipe, Kitty. I hope you're having a lovely spring!!
