World Peace Cookies


Please join me for some World Peace Cookies in this first week of 2021!  These cookies are ones that I had read about several years ago and have been wanting to make.  The recipe is from Dorie Greenspan's Dorie's Cookies.  The cookies are very dark and chocolatey, and almost like a shortbread in texture. They definitely go well with a cup of tea, or coffee, if you prefer.   How did the cookies get their name??  It seems a neighbor of Dorie tasted one and gave them the name, being convinced that if everyone in the world ate one, there would be "planetary peace". 

I have a simple centerpiece on my kitchen table right now, which is so nice after all the Christmas decorations.

My darling daughter gave me this beautiful spoon for Christmas.  Isn't it beautiful?  She also gave me some Tazo Vanilla Bean Macaron tea, which was so nice with the cookies.

 

When Harper and Hayden spent the night, we made Snowmen out of socks, and when Ella came over we made a gnome out of a sock, by using the YouTube video on how to make a gnome in 3 minutes.  


As part of my Christmas gift, my daughter took me to a darling spot to have lunch and tea.  Just look at those enormous teacups, and we each drank two cups.  I had the Happy Tea and Coconut tea.  Molly had Earl Grey and the Coconut tea.  It was so special to have time for just the two of us!! What a gift!   


My son, Mike, who lives here with me, turned 40 on New Year's Eve!  He's here with Layla, my youngest son and daughter-in-law's dog.  They left for Colorado with Harper and Hayden on the day after Christmas, and Mike took care of Layla.

World Peace Cookies

World Peace Cookies

These cookies are shortbread in texture but very dark chocolatey, and salty in flavor. They certainly put a smile on face.

Ingredients

  • 1 1/4 cups all purpose flour
  • 1/3 cup natural unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 11 tablespoons (1 stick plus 3 tablespoons) unsalted butter, room temperature
  • 2/3 cup (packed) golden brown sugar
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 5 ounces extra-bittersweet chocolate (do not exceed 85% cacao), chopped (no pieces bigger than 1/3 inch) See NOTE

Instructions

  1. Sift flour, cocoa, and baking soda into medium bowl.
  2. Using electric mixer, beat butter in large bowl until smooth but not fluffy. Add both sugars, vanilla, and sea salt; beat until fluffy, about 2 minutes. Add flour mixture; beat just until blended (mixture may be crumbly).
  3. Add chopped chocolate; mix just to distribute (if dough doesn't come together, knead lightly in bowl to form ball). Divide dough in half. Place each half on sheet of plastic wrap. Form each into 1 1/2-inch-diameter log. Wrap each in plastic; chill until firm, about 3 hours. DO AHEAD: Can be made 3 days ahead. Keep chilled.
  4. Preheat oven to 325 degrees.
  5. Line 2 baking sheets with parchment paper. Using thin sharp knife, cut logs crosswise into 1/2-inch-thick rounds. Space 1 inch apart on prepared sheets. Bake 1 sheet at a time until cookies appear dry (cookies will not be firm or golden at edges), 11 to 12 minutes.  I let the cookies rest on the cookie sheets for about 4-5 minutes.  Transfer to rack; cool. DO AHEAD: Can be made 1 day ahead. Store airtight at room temperature.

Notes:

I actually used mini semisweet chocolate chips, because that's what I had, and they were plenty chocolatey, and I didn't have to chop the chocolate.

You can also freeze the logs for up to 2 months, which would be nice to pull out when you need to. Just let the log sit out to soften for a bit and then slice.

If only we would all drink a cup or two of happy tea and a enjoy a few of those chocolatey, world peace cookies....just imagine how kind the world could be. =) You have such a beautiful family, Kitty. I love how they love and look after their mum and grandmother. I am looking forward to visiting your tea party each week, to delight in your china and salivate over your delicious baking.   4. Oh my goodness! I love all the pictures. Wonderful! Girl....I am loving that spoon! YES! Girl, I need to make those cookies. Looks so good and just the name of them struck a chord for me! Maybe we all need to make a boat load of them as my granny would have worded it! Give them to everyone we see and maybe World Peace will come about!   6. Happy Belated Birthday to Mike! I've never met a chocolate cookie that I didn't like so your world peace cookies are right up my alley.

    The snowmen and gnome socks are super cute. Gnomes are really popular right now...last month, I got a couple of gnome Christmas countdown calendars.

  7. Love that tea spoon! What a treasure! And the cookies sound great! I love that you spent such fun times with your grandchildren making the sock snowmen and gnome. What a fun time that was! And then to go out and have tea with your daughter...what a blessing! I don't have a daughter, but I do have a daughter in law, and that gives me a great idea. We haven't done anything just the two of us like that and I would love to do that. Thank you for sharing that idea with us. Love the sweet doggie too, and your handsome son! I have a 40 something single son living at home too. We are blessed to have him. I am sure you feel the same way! Have a wonderfully happy New Year!

  13. It was lovely to see your photographs and the happy smiling faces.

    Here in England, UK we are in lockdown (due to Covid regulations) so cafes, restaurants etc are all closed and meeting up is not allowed until mid February at the earliest! I'm just hoping that after that things will improve, we shall have to see.

    I think the spoon your daughter gave you is beautiful and many thanks for sharing the recipe.

The sock snowmen and gnomes the girls made are adorable, my CC made a sock snowman at school and she showed me how to make one…I plan on sharing the how to on my blog later this month.   18. I made World Peace Cookies for Christmas to have a little chocolate on the platter :) I love their flaky texture. What a sweet looking dog. We used to love dog-sitting for our daughter's dog but sadly, he passed away too young this late this past summer.

  19. Aw, it was nice to have a picture of your son, Mike, to put with my prayers when I pray for him. Those cookies sound amazing, and I think Kevin and Zach would love them. We all love anything chocolate! Who doesn't, right? Actually, I have known some people who do not love chocolate, and I always have to wonder about their mental state. LOL! I loved seeing the photo of you and your daughter drinking tea, too. Those are some big tea cups, but I would have joined right in for two of them with you! God bless you, sweet friend.
