I'm having some chai tea with a slice of this Impossibly Easy Pumpkin Pie, recipe courtesy of Betty Crocker.
This Friendly Village teacup by Johnson Brothers is a favorite pattern of mine for the Fall and Winter months.
Do any of you remember the "impossible pies" that were a hit back in the 1970's? The pies made their own version of a "crust" and an ingredient was Bisquick. One of my sons does not care for the crust in a pumpkin pie. I decided to try this pie and see what he thought. I made my own baking mix to use. Guess what? My son loved the pie!! When I make this again, I will increase the amount of spice.
Here's the recipe for the pie, and I don't think you'll miss the crust!

- 1 cup canned pumpkin (not pumpkin pie mix)
- 1/2 cup baking mix, such as Bisquick or a homemade version, found here
- 1/2 cup sugar
- 1 cup evaporated milk
- 1 tablespoon butter or margarine, softened
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla
- 2 eggs
- Whipped topping, if desired
Directions
- Heat oven to 350ºF. Grease 9-inch pie plate.
- Stir all ingredients except whipped topping until blended. Pour into pie plate.
- Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 3 hours or until chilled. Serve with whipped topping. Store covered in refrigerator.
This is a turkey craft that my son, who is staying with me, created for my younger grandchildren. I always like to participate, too, and this was my turkey. He created a stencil and then had the kids (and me) paint the pieces with a folded square of photo quality paper. We dipped the square into paints and painted our turkeys.

ReplyDeleteI think of all the seasonal dishes, J-Bro's Friendly Village is the set I'd enjoy the most! I love the scenes, they feel very New England-ish to me:@) I've only tried the impossible coconut pie and that's very good. Now you have me wondering if I should try this with Jay's pumpkin puree... I like to make my pies on Wed and this would eliminate the crust getting soft. I've never added vanilla either, sounds good! The turkey turned out cute, Happy Thanksgiving Kitty-enjoy:@)
ReplyDeleteI will try that pie! I am always looking for a different version of a good pie! My gramma always added a bit of vanilla to her pumpkin pie filling! Thehubs doesn't like the crust either, so I will have to make one just for him! The turkey is so cute! xxDazee

Your turkey is really cute, Kitty, and how wonderful to have a son who likes to create fun projects for the little ones. I have made any number of those 'impossible pies.' The broccoli and cheese was a good one as well as the apple. Now, that pumpkin pie could turn into a real favourite for me as pumpkin is a favourite of mine. ReplyDeleteI recall making the impossible apple pie way back when. And, the only quiche I make is the Bisquick recipe and I it's always a hit for luncheons with a salad. I don't miss having a pastry crust, have you made it as well Kitty?
ReplyDeleteI do remember the pies of the 70's! I enjoy the crust though. :) I pre-bake mine for a bit before adding the filling so it won't be soggy. Love the tea cup pattern! Fun art work! I bet the grands loved this activity.

Can't say I remember the pies of the 70's?? I love the pastry the most on a pie. In fact pies are my favorite desserts!! My dear mother on law Betty taught me to make pastry, she was incredible. I loved watching her hands work, they mesmerized me.

ReplyDeleteI do remember that I had an apple pie recipe called "Crustless Apple Pie" that must have been made similarly. Although I think you put something on the top. Hi Kitty, I hope you had a very nice Thanksgiving with your beloved family! Ours was very nice; we ate at my parents' house with our son, my sister, her daughter and daughter's boyfriend. We had LOTS of food, and I was glad for us to all be together.

The turkey is darling! And yes, I do remember "impossible pies". My favorite one is the cheeseburger version. This looks good. I am trying to remember if I ever tried a sweet one. Seems like there was a custard? Maybe you remember.
