Cabra Castle Scones

I'm taking you away to Ireland, the only European country my hubby and I visited and our dream vacation, which was nearly three years ago.  While there, on our last stop, we stayed at Cabra Castle, which was sooo beautiful.  Our tour guide informed us that in his opinion, they made THE BEST scones in all of Ireland.  I had to try it and yes, it was so wonderful.  On a whim, when I got home, I wrote to them and asked for the recipe.  Surprisingly, they sent me the recipe!  The only problem, the recipe was done in pound weights!!!  Well, I thought, I have a scale, so I halved, then quartered the recipe, weighed and then converted to cups.  Here's my rendition of Ireland's best scones.





Teapot is from Ireland.  My sister bought us the book.

2 c. + 1 heaping Tablespoon flour
1/3 c. sugar
1/4 t. + 1/8 t. baking powder
4 T. margarine (I used butter)
1/3 c. dried fruit
1/2 c. milk


Mix the flour,  sugar and baking powder together in a bowl.  Cut in the margarine or butter.  Add the dried fruit and mix.  Add the milk and knead until all flour is incorporated.  Pat the dough out into a circle and then cut into eighths. 

Bake the scones in a 350 degree oven for about 20-25 minutes.

In my Irish Blessing Journal, I recorded our daily events. I used some doilies for my tray placemat.

  3. I loved seeing your memories Kitty, and I'm with you. I would not kiss a wall millions of other mouths have touched either. Ewww! There's a limit in how much culture I'll take in, and I guess you know what my limit is. Love your dishes. I bought some similar ones earlier this year, but haven't shown them on my blog yet. Hope you've been doing well this summer.

  6. Kitty, your personal pictures are so perfect for this post. I feel the same way about kissing that stone!!! Beautiful plate with delicious looking scones!! I have a lot of German cookbooks and they are all by weight - where I need to remember an American lb is 450 grams and a European lb is 500 grams!   16. SO cool, Kitty!!! I'm with you on kissing that Blarney Stone. I don't think I want to come in contact with quite so much DNA as that!!! Ireland is a country I have long wanted to visit, but I'm a wimp about flying...so I guess that's out! My Mom and my niece have both been there and loved it. It would be cool to see all the castles and the countryside and to just hear the men talk! :-) I always think of Colin Farrell!!!! I'm sure that if I ever go to Ireland I will have to budget a lot of money for shipping back to the U.S. of all kinds of fabulous stuff!!!!!!! You were very wise to ask for that scone recipe. You never know if you don't ask!

Love scones and you both look so cute kissing the stone..yeah, I would have to put a tissue in the stone before I place my lips in it, lol..So happy you both had such a beautiful trip.

    How lucky for you... going to Ireland and having that cute husband! Oh how I want to go to Ireland and Scotland too!

    I can't even do metric measures let alone pound weights. (They're not the same are they?) Who am I fooling... I can barely use any measuring cup :/

    I am making something luscious for two friends Sat. morning and I think I'll make these with cranberries and pecans...think that would be good?
    Just warm with butter?....or shall I do a glaze?
    Is this recipe as easy as it sounds???
