Homemade Snowman, Cookies, and Creamy Tomato Soup


 This week after school, Cissy and I did a project before our cookies.  She was so excited to make the snowman.  I found directions on the internet, and we used some old white socks, rice to fill the snowman, the foot of another pair of old socks, some buttons, ribbon, and a permanent marker.

 Didn't her snowman turned out so cute??  She even used some pinkish eye shadow for rosy cheeks.  We just hot glued the buttons on the front and for the nose.    This is really an easy and fun project.

 Our Melting Snowman cookies were inspired by Mary.  You can find out how Mary did the cookies by clicking here.  Since Cissy and I didn't have a lot of time for baking, I bought Pepperidge Farm Brownie Cookies for our base.  You could use peanut butter cookies, or really whatever flat cookie you like.  You just melt the white almond bark, plop it on the cookie, spread it a little,   and then add your mini halved peanut butter cups, mini chocolate chips, and we used candy corn (yes, I still had some!) for the nose, that I pre-cut.  Aren't they adorable!?  I'm not sure who has more fun, me or Cissy!?

Yield: 6-8

Creamy Tomato Soup

My late beloved and I visited Asheville a year before he passed away. While there, we ate at The Tupelo Honey Cafe, and I enjoyed this soup, which is perfect with a grilled cheese sandwich.

ingredients:


  • 1 (24-ounce) can crushed tomatoes
  • 3 cups water
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 2 teaspoons sugar
  • 1 and 1/2 teaspoons sea salt
  • 1/2 teaspoons freshly ground black pepper
  • 1 cup heavy cream

instructions:


  1. Combine the tomatoes, water, tomato paste, bay leaf, sugar, and salt in a heavy saucepan.  Bring to a boil., immediately decrease the heat to medium, and simmer for about 20 minutes, or until the mixture lightly coats the spoon.
  2. Whisk in the pepper and the cream and continue to cook over medium heat for about 2 minutes. 

NOTES:

When I have extra tomato paste, I freeze the paste on parchment paper in 1 tablespoon increments.  When frozen, I then place into a freeze-proof container.

  19. Well I don't know what I am liking the best, the snowman or the cookies! LOL! Yum on the cookies but that snowman is adorable. What a fun project for you and Cissy. Loving that tomato soup recipe too. Marty doesn't care for it but I love me a good bowl of tomato soup. I can remember my granny making it for me and she always put a tad of butter in it. YUM!   23. I made a similar snowman once quite a few years ago. Yours came out cuter, though. And I have seen those melted snowman cookies before. I love your idea for using purchased cookies as a base. Your cookies came out so cute. I enjoy seeing the projects that you and Cissy come up with and work on together. What a special relationship the two of you have!

  24. What an adorable post, Kitty! Love the sock snowmen and those cookies are too cute! I once made 'Easter Bunnies' out of socks, years ago. They were fun to make. I love tomato soup, but all the store brands have so much sodium. I've been looking for a good recipe that's easy to make and now I've found it!     Cissy is so lucky to have you for a grandmother!! Seriously Kitty, she will never forget these times that you two have spent together. Growing up, I dearly loved my maternal grandmother, and we spent a lot of time with her, but she never taught me to cook or sew. I wish that she had, but I still have fond memories of our times together and I still miss her to this day.

    The snowman is darling :D and the cookies look delicious. I happen to know that the soup is delish because I made it one winter. If you ever return to Asheville, I'll be there to meet you and we'll have lots to talk about. I hope you have a great weekend, my friend!!

  26. Such a sweet picture of Cissy ... I learned to make tomato soup in grade 7, which was a very long time ago ( ha ha) ..Cissy has a good head start learning her cooking and sewing skills from her loving grandma....xoxoxox

  27. Those cookies are absolutely darling. My Little Dude would have fun making them too. I have always wanted to make my own tomato soup, but don't have a food mill to start with fresh tomatoes. This recipes sounds delicious and easy enough. I can't wait to give it a go!
