Pecan Tassies

 My dear friend, Michele, sent me this pine cone trio set and I have so enjoyed using it.  I've shown my pine cone teapot that my sweet sis sent me several years ago.   I am having some coconut vanilla tea today, which is from Tea of Life.   I have always found beauty in pine cones and have collected them for years, and love using them for decorations.   


 Isn't this teacup so beautiful?  Seeing the spray of pine cones inside the cup is an added bonus.  Thank you so much, Michele, for sending this thoughtful gift to me.

Pecan Tassies

Cissy and I recently made these delightful morsels, which are like mini pecan pies, and are perfect with a cup of tea or coffee.   The dough is so easy, and we had fun making them.

ingredients:

1/2 cup (1 stick) unsalted butter, at room temperature, plus 1 tablespoon butter, melted
One 3-ounce package cream cheese, at room temperature
1 cup all-purpose flour
Nonstick cooking spray
1 large egg
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
Pinch of fine salt
1/2 cup pecans, finely chopped

instructions:





  1. With an electric mixer, beat the 1/2 cup butter and the cream cheese until smooth. Add the flour and beat until fully combined. Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour.
  2. Preheat the oven to 325 degrees F. Spray a 24-cup mini-muffin pan with cooking spray.
  3. In a large mixing bowl, whisk together the melted butter, egg, brown sugar, vanilla and salt until smooth. Set aside.
  4. Shape the chilled dough into 24 balls, about 1 inch in diameter. Press each ball into a cup of the muffin pan, spreading evenly and up the sides, then spoon 1 teaspoon of the pecans into each muffin cup. Fill each cup with the egg mixture until evenly distributed, about 1 teaspoon in each. Bake until the filling is set, about 25 minutes. Cool on a wire rack for 10 minutes, and then remove from the muffin pan.

    I hope your Christmas went well. I thought about you during the holidays, with your recent loss. Your pine cone setting is so perfect for winter; I love pine cones, too! The tea setting was such a sweet and thoughtful gift from Michele. I like teacups with the design inside the cup, as well as outside.

    Your pecan tassies look and sound delicious, as does the tea. You had me at "vanilla." :) I LOVE pecan pie, but have never had pecan tassies. As Vee commented, I will have to stay away from baking, and eating, a lot of sweets for now. I certainly consumed enough of them over the holidays. ;>)

    Thank you for your recent visits, my friend. I hadn't forgotten you; life has just been so chaotic here lately. I'm now trying to catch up on my blog visits. I wish you many blessings and much joy in the coming year, Kitty.

Perhaps I should bake some seeing as I am a gal who lives in Tassie. =) I am always astonished, dear Kitty, how you always have the perfect teacup and saucer which matches a similar teapot! Your china collection is quite like no other. May your 2019 be filled with pretty teacups overflowing with ambrosial teas and oodles of fun baking with your Cissy.     I made the gingerbread cake and it was a success! I used a different brand of molasses-not sure if that made a difference.
