Carrot Raisin Bread

I've made us some Carrot Raisin Bread for our tea today.  Won't you join me for an after Easter Tea?

 

I'm using one of my painted teacups and matching plate that my late Aunt Kitty gave me as a shower gift.  

My sweet bunny planter was from a friend that passed away.  I love how gifts remind us of those we have lost in our lives.

Don't these carrots look real??  My daughter  sculpted  and painted them when she was in middle school.  I just love them!

I printed off the recipe for Carrot Raisin Bread, from Mimi's Cafe back in 2001.   I'm thankful that I did because they no longer share it on their website.  Have you ever tried their carrot raisin bread?  They put a basket of it on the table, along with their mini french bread, and both are wonderful!  In case you don't have a Mimi's Cafe nearby, you may want to try this fabulous bread.  It's not exactly like what they serve in the restaurant, but it's really good!  I've made mine into mini bundts.  Here's the recipe:

 
INGREDIENTS
1 1/2 cups all-purpose flour 
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup vegetable oil
1 cup brown sugar
3 eggs
1/2 cup chopped walnuts
1/2 cup diced canned pineapple, drained (I use crushed)
1/2 cup raisins  (I used golden raisins this time because that's what I had)
1 cup finely shredded carrots

DIRECTIONS
Sift first five ingredients into a mixing bowl. In a separate bowl, whisk together the oil, sugar and eggs. Stir the liquid mixture into the flour; mix well. Add the next four ingredients; stir again.

Grease and flour a 9-inch square pan or four mini-loaf pans. Fill the pans 2/3 full with batter. Bake at 350 degrees F for about 30 minutes. Mini-loaves take about 20 minutes.  I love making mini bundts for this.

  3. Kitty, I know that you probably are tired of my writing that your post are "charming", but they are! This one is especially charming and adorable. Your sweet bunnies and carrots made me smile and the carrot raisin bread made me hungry. The teacup and plate are wonderful and all of the green is, definitely, all about spring!

  6. Oh Kitty, we used to go to Mimi's all the time, but with my food sensitivity put the brakes on that. We always like their carrot-raisin bread, but I must say yours are cuter. Glad to have the recipe so I can control the ingredients. I can use grape seed instead of vegetable oil (which is soy).

    Love your tea cup. I like all things feminine.

    Your daughter did a great job with the carrots. I thought they were organic and real. :)

  12. Thanks Kitty for sharing your recipe. I received a mini bundt pan for Christmas and now I finally have a recipe for it. I love carrot cake and your version seems healthier minus the cream cheese frosting. Your painted teacup and bunny planter are wonderful keepsakes.   16. Ooooo, aren't we lucky that you've shared the secret recipe, Kitty!! I've only eaten at Mimi's Cafe once in my life, while visiting my baby sis in AZ. We don't have them in Ohio, so this is a real treat.
    Your whole family must be artistically inclined...I could have sworn those carrots were real, no lie!
    Pretty teacup & teapot too. You inspire me to get busy & use some of mine in blog postings. I used to collect them until it got out of hand. LOL

  29. Carrot cake seems to be the favourite across blogland! The faux carrots do look real Kitty, your daughter did a good job. I wouldn't mind some fake desserts to show with my tea each week. :-)

  38. Lovely blog ~ and amazing carrots!! I was going to offer a suggestion to replace at least 1/2 the oil with an equal amount applesauce ~ this makes for a more healthy and very tasty outcome.
