Oatmeal Raisinets Cookies

Would you like to join me for some Irish tea and Raisinets Cookies?  I kept a journal of our trip to Ireland that we took several years ago.  My shamrock plate is from Target and my hankie napkin is from a sweet blogging friend.

The sweet tea mug is from my Mom and sister.  The darling teapot I bought for $1.50 at our local monthly trade days.  The spout is chipped and there's lots of crazing, but I don't care!  It's from County Cork Ireland and I'm sure was well-loved by somebody, and now me.

The bottom of my teapot.

When my dear hubby was in the hospital, he received a goodie basket from some sweet friends and inside was a bag of Raisinets. When I was a kid and went to the movies, this was one of my all time favorite candies!!  Well, on the back of the bag was the recipe for these cookies.

1 1/4 cup flour
1 t. baking soda
3/4 t cinnamon
1/2 t. salt
1 cup butter or margarine, softened
3/4 cup sugar
3/4 cup packed brown sugar
1 t. vanilla
2 eggs
3 cups quick or old-fashioned oats
1 (11oz.) package Raisinets
1 cup chopped nuts, optional

Preheat oven to 375 degrees.

Combine flour, baking soda, cinnamon and salt in a bowl.

Beat butter and both sugars and vanilla until creamy.  Beat in eggs; gradually beat in flour mixture. Stir in oats, Raisinets and nuts.

Drop by rounded tablespoon onto I greased cookie sheets.

Bake for 9-11 minutes. Cool on Cooke sheets for 2 minutes; remove to wire racks to finish cooling.

Makes 4 1/2 dozen.

NOTE:  I made ice cream scoop size cookies and they took about 17 minutes.

Years ago, my Mom gave me this  kissing leprechaun couple.

This exquisite Irish lace was gifted to me by the same sweet friend that sent me the hankie.  I'm thinking of framing it to protect it's beauty.

I am sharing this with:

  4. Hello there Kitty,

What a yummy and sweet tea post celebrating St. Patricks day. I love the Shamrock motif on the teapot, pretty tea mug and plate. It is all arranged so prettily on your tea tray with the Irish Blessings journal. All is sweetly inviting with those yummy oatmeal raisin cookies, tea and also the charming dear little kissing leprechaun couple figurine, the exquisite Irish lace that was gifted to me by the same sweet friend that sent you the hankie also. Lovely.

  9. What a sweet Irish tea table and I'm intrigued by the cookie recipe. Chocolate covered raisins is the only way I'd eat them as a child. I think the lace would look very nice framed, or even under glass in a tea tray.

  19. I always loved Raisinettes growing up, and I am sure they would make a yummy cookie. I love all your gorgeous dishes! What an adorable figurine!

Speaking of candy, I'm trying to figure out what to make with the new carrot cake flavored M & M's that can only be found at Walmart. Perhaps sugar cookies for Easter.

  32. Yes, YES, do frame that lovely lace!!! Carol at Serendipity has one of her FSL hearts on a red velvet background, in a picture frame...gorgeous idea.

My ancestors hail from Co. Cork, so I'm especially enamored with your pretty teapot. They would have never thrown it out just because it was chipped, so why should we?

Very pretty setting & very YUMMY looking cookies, too. Thanks for the recipe!
