Hot Chicken Salad Casserole


 
For my lunch for two, I used my colorful rooster, my covered hen dish and a pretty plant. 
 
 
 
My Kohl's black and white check tablecloth was used along with the gingham check napkins that I made.
 
 
 
The rooster luncheon plate came from Ross, along with the matching mug.  Red salad plate is from Target and the red flatware is from Homegoods.
 
 
These are perfect for a big mug of coffee or tea!
 
 
 
I needed to use some leftover chicken and decided to make this casserole.  I have another favorite for leftover chicken, which is Hot Mexican Chicken Salad found here .  Both recipes come from Southern Living Cookbook Classics. 

4 cups chopped cooked chicken
1 1/2 cups chopped celery
4 hard-cooked eggs, chopped
1 (2-ounce) jar diced pimento, drained (I omitted)
1 T. finely chopped onion
3/4 cup mayonnaise
2 T. lemon juice
3/4 t. salt
1/2 t. freshly ground pepper (my addition)
1 cup shredded Cheddar cheese (I used a Mexican blend)
2/3 cup sliced almonds, toasted

Combine first 9 ingredients in a bowl; mix well.  Spoon into a lightly greased 12 x 8 x 2-inch baking dish; cover and bake at 350 degrees for 20 minutes.

Sprinkle with cheese; top with almonds.  Bake, uncovered, 3 additional minutes or until cheese melts. 

Makes 6-8 servings.

  6. Whoa! You changed up your page!!! I didn't think I was in the right place at first! I like the black, red & white, and I REALLY like the houndstooth background! I wish I could get Ramon to eat casseroles. He can be such a picky thing sometimes. It would sure make my life a lot easier! That's OK....when I have my surgery in a couple of months he'll have to take over kitchen duty (to a certain extent). He'll find out it's not all fun & games in there!!! I have a feeling I should put Pizza Hut on speed dial before I go under! :-) Ross for the dishes, huh? I STILL haven't been to the new ones that recently opened here around the Kansas City area! I don't know what I'm waiting for. I think it's because I've been on a buying hiatus and I'm afraid I'll go in there and find a billion things I want and fall off the wagon. Or I'm lazy. Yeah...probably that 2nd one! :-)

  9. Love all of the black and white check and who does not love rooster decorations? I will try the casserole, but will substitute something for the mayo. I have never learned to eat it! I do love almonds, though!

  10. Roosters...my mother loved them. I didn't keep all of her collection, just the ones that were my favorites. That includes a set of dishes that one of these days I should feature on a table.

  20. I can't believe how his tail feathers match your wonderful plates. It is so cute on the checked back drop and that casserole sounds like the perfect thing for a cold and snowy day here. I got a rotisserie chicken yesterday and for the two of us it will last for about 3 meals. This would be perfect with it.
