Chicken, Mushroom and Wild Rice Soup

I found this delicious soup recipe from the March 2011 issue of Southern Living.  I've adapted the preparation slightly for easier clean up.  We enjoyed this soup very much. 

2 (6-oz.) packages long-grain and wild rice mix
10 cups chicken broth, divided
3 T. butter
1 cup sliced fresh mushrooms (I doubled this)
1 cup chopped onion
1 cup chopped celery
1/4 cup butter
1/2 cup flour
1/2 cup half- and- half (I used 1/4 c. heavy cream and 1/4 c. milk)
2 T. dry white wine
2 cups cooked shredded chicken breasts (or leftover chicken)
garnishes: fresh parsley leaves, freshly cracked pepper

Bring rice, 4 cups chicken broth and 1 seasoning packet from rice mix to a boil in a dutch oven over medium-high heat.  (Reserve remaining packet for another use.)  Cover; reduce heat to low and simmer 20 minutes or until liquid is absorbed and rice is tender.

Meanwhile, melt 3 T. butter in a large skillet over medium heat, add mushrooms, onion, and celery and cook, stirring often, 10-12 minutes or until tender.  Remove from the skillet into a bowl and set aside.

Melt 1/4 cup butter in the same skillet.  Whisk in flour and cook,  whisking constantly for 1 minute or until thickened and bubbly.  Gradually whisk in remaining 6 cups broth and cook, stirring often for 8-10 minutes or until slightly thickened.  Whisk in half- and -half and wine.  Add all of this, along with the reserved mushroom mixture  and the chicken to the rice in the dutch oven.  Cook, stirring occasionally for 5-10 minutes or until heated through (Do not boil.)   Garnish, if desired.

  2. MMMMMMMMMMMmmmmmmmmmmmmmmm well it is friday during lent, so can't do chicken in it - bet it is dandy without even, so much flavor happening.

    I am SO going to try this, made me hungry just imagining eating it, love a good soup and love soup with wild rice, thanks, Kitty!

  8. You made me realize, the one soup, I have not made, this winter is mushroom soup. How did I do that? I have to try to fit this in. It looks soothing, the quality of a good soup, in my opinion.

  11. ummm, this sounds sooo wonderful. We love soups year 'round. I will try this one.

    The shelf is now waiting on black and white stripes and all the hardware. I am having a hard time locating large brass knobs we like for the coat hangers.

  14. Kitty...I keep seeing this photo of yours on several of the linky parties and everytime I kept saying to myself...you've GOT to go see that. Well I should have known it was yours. YOu are such a fabulous cook. Oh Kitty, this looks SO good and sounds so delicious that I have just got to try it. And it uses some convenience foods which make it easier and faster too. My husband will absolutely love this and so will I.

    Yesterday and alot of last week was so gorgeous here weatherwise. Well now its back to snowing and cold again. This soup will be perfect for tonights dinner. I think I have everything on hand. Thanks for such a great recipe.

  21. Mmmmm. This soup looks absolutely delish! I love every ingredient in it and I just happen to have some mushrooms that I need to use, so this will be perfect! We're going away for the weekend and I'm not sure about leftovers. Do you think it would work if I just divided it and froze half before adding the cream? Then I'd just have to add the cream in later, when I thawed and heated it up.
